Melt the butter, in a large pot, over medium-low heat. Once melted, add the marshmallows and cook until completely melted and smooth. Stir occasionally.
Remove the pot from the heat and stir in the vanilla extract. Stir in the Rice Krispies cereal until well combined and it's evenly coated in the melted marshmallows. * If using unsalted butter, add ¼ teaspoon salt in with the vanilla extract.
Use a ¼ cup measuring cup to scoop out the Rice Krispies into 16 muffin cups. Press the treats down in the center, with a 1 tablespoon measuring spoon, to create the nest shape.
Allow the easter nests to set in the pan for 1 hour, at room temperature, before decorating them.
Add the coconut and about 3-4 drops of green food coloring to a ziplock bag. Vigorously shake the bag to color the coconut.Add about 1 tablespoon of green coconut to each egg nest.
Top each nest with 3 mini cadbury eggs. Enjoy!
Notes
10 Ounces Marshmallows : You can use regular sized marshmallows or mini marshmallows.
Regular Marshmallows - If you can't find a 10 ounce bag then use 40 marshmallows which is equal to 10 ounces.
Mini Marshmallows - You can use a 10 ounce bag of minis, which is also equal to 6 cups mini marshmallows (if measuring from a larger bag).
Recipe Tips -
Cooking Spray Tip : When working with gooey marshmallows in Rice Krispies recipes, it's always a good idea to spray the kitchen tools you're using with cooking spray. For this recipe, spray the 1/4 measuring cup, the 1 tablespoon measuring spoon, along with the wooden spoon you use to stir the Krispies together, with cooking spray to prevent it from sticking badly.
Fresh Ingredients : It's important to use fresh rice krispies cereal along with fresh marshmallows. Although it's tempting to use up the half eaten/opened box of Rice Krispies in your pantry, it's always a good idea to start with fresh & new cereal when making this recipe. Same thing with marshmallows, after awhile marshmallows can stick together and become not as fluffy and soft, so make sure you are using fresh marshmallows and not some that have been hidden in your pantry for a year.
Butter : Use salted butter or unsalted butter. The recipe has been tested using salted butter, which is why no additional salt is called for, if using unsalted butter then be sure to add 1/4 teaspoon salt in with the marshmallows.
Heat Low & Slow : Do not turn the heat up to try to speed up the cook time when melting the butter and marshmallows. Low and slow is the name of the game when making Rice Krispie Treats. You don't want the mixture to burn at all, which is why it's important to keep the heat low, and to stir it frequently.
Variations & Substitutions -
Mini Egg Candy : Use any egg shaped candy that you want. Jelly beans, speckled egg m&m's, Hershey's chocolate covered pastel eggs, or mini robins eggs can all be used in place of the mini cadbury eggs. Or try using a mixture of several different varieties of egg candy.
Rice Krispies Cereal : Make chocolate easter egg nests by using cocoa pebbles instead of Rice Krispies cereal. You can even use half fruit pebbles cereal + half Rice Krispies cereal for a twist.
Green Coconut : If you don't like coconut, or just prefer to not use food dye, you can leave the coconut as is (without dying it) or try using some edible grass instead. Edible grass can be found alongside the other Easter candy in the Easter aisle at any store.
Marshmallows : If you want a really fruity treat, try using a 10 ounce bag of the fruity mini marshmallows instead.
