Carrot Patch Chocolate Covered Strawberries are a fun and festive Easter recipe! Chocolate dipped strawberries are made to look like carrots using orange colored candy melts. Serve the "carrots" on a dirt patch which is just crumbled Oreo cookies. This is a fun treat for a party and has a really WOW presentation too.
Line a baking sheet (cookie sheet) with parchment paper.
Place the orange candy melts into a microwave-safe bowl and microwave in 30-second increments, stirring after each, until it's melted and smoothly combined.
2 cups orange candy melts
Add the coconut oil and stir until melted and it's dissolved into the chocolate.
1 teaspoon coconut oil
Working one strawberry at a time, dip it into the orange melts chocolate, and place it on the prepared baking sheet. Repeat with remaining strawberries. *Depending on how big or small the strawberries are, you might get less or more than 24 strawberries dipped.

Put the remaining orange candy melts into a Ziploc sandwich bag. Snip a tiny hole in the bottom corner and drizzle it over the dipped strawberries.
Allow the 'carrot' strawberries to set and harden at room temperature for 1 hour.
Place the crushed/chopped Oreo cookies onto a serving platter or plate. Gently put the set & hardened carrot strawberries on top of the 'dirt'. *The Oreo dirt is optional but it's a really fun and super cute way to serve these carrots.

Nutrition Information : This amount is for 1 chocolate dipped strawberry. It does not include any of the Oreo cookie crumbs. Wash & Dry Strawberries : Place strawberries into a colander and run it under some cold water to rinse the strawberries. Place the berries on a layer of paper towels or a clean kitchen towel. Use some additional paper towels to gently blot and dab the strawberries dry. Coconut Oil : It's important to use the coconut oil in the melted chocolate because it provides a glossy sheen to the chocolate, helps to thin it out which makes it easier to dip the berries into, and it helps the chocolate harden and adhere better to the strawberries.
