Switch up Taco Tuesday and try these simple and super delicious Slow Cooker Fiesta Chicken Tacos for dinner. Perfectly shredded chicken, black beans, corn, salsa, and chicken taco seasoning is all it takes to get this family favorite dinner on the table.
Cover with the lid and cook on LOW heat for 6-7 hours. Shred the chicken with two forks and mix everything together.
Use tongs, or a slotted spoon, to serve the chicken taco meat in tortillas and top with your favorite taco toppings.

This recipe makes enough for 16 tacos (when served with the small flour tortillas) or enough for 8 people with 2 tacos per person. Salsa : Use a salsa that you love! I prefer to use the fresher salsas that you can find in the refrigerated section of the deli area. Chicken Tip : If the chicken breast pieces are really big, I like to cut them in half before adding them into the slow cooker. This helps them get really tender and soft. Even if they are not big, I still do this because that's what I prefer. So cut the chicken in half if wanted. Want It Spicy? : Use medium or hot salsa. A packet of hot taco seasoning. Add cayenne pepper or chili powder. Add a can of diced green chiles or chopped jalapeños into the slow cooker mixture. Top with shredded pepper jack cheese and/or sliced jalapeños and hot sauce.
