Fiesta Chicken Taco Recipe (Easy Slow Cooker Dinner Idea)

My absolute favorite way to get dinner on the table is with easy, simple, dump & go slow cooker meals. These fiesta chicken tacos require hardly any prep time and you literally just have to add everything to the slow cooker and walk away! Easy peasy.

Tender, shredded chicken with chunks of black beans and frozen corn. The chicken cooks in salsa and it’s perfectly seasoned with a packet of chicken taco seasoning.

Serve alongside your favorite tortillas (flour, corn, crispy) and with all your favorite taco toppings!

Ingredients You’ll Need

  • Boneless, Skinless Chicken Breasts – You need about 2 pounds of chicken, which is equal to 3-4 chicken breasts. The recipe calls for these to be cut in half, which is optional, but I think it makes the chicken more tender and soft during the cook time.
  • Salsa – Use a salsa you love! I prefer using the fresh salsas that you can find in the refrigerated section of the deli area.
  • Black Beans – Any bean can be substituted if wanted. Just make sure they are drained and rinsed.
  • Frozen Corn
  • Chicken Taco Seasoning Packet – There is also a ranch taco seasoning packet that is yummy, or a southwestern chicken taco seasoning packet that is good as well.
  • Taco Toppings For Serving – My family loves using small flour tortillas, shredded cheese, diced tomato, and sour cream. Corn tortillas work, crunchy corn tortillas, etc.

How To Make Fiesta Chicken Tacos

  1. Spray the insert of the slow cooker with cooking spray.
  2. Pour the salsa into the bottom. Top with the chicken. Sprinkle on the chicken taco seasoning and then add the black beans and corn.
  3. Cover with the lid and cook on LOW heat for 6-7 hours. Shred the chicken with two forks and mix everything together.
  4. Use tongs, or a slotted spoon, to serve the chicken inside flour or corn tortillas and then top with your favorite taco toppings.

Use up leftovers of this fiesta chicken taco meat to make another easy dinner! Make taquitos, quesadillas, or use as a nacho topping to re-purpose leftovers for another meal.

  • Leftovers will keep well stored in the fridge, in an airtight container, for up to 3-4 days.
  • To freeze this chicken, place the room temperature fiesta chicken taco meat into a freezer-safe ziploc bag or container, and freeze for up to 3 months. Allow it thaw in the fridge overnight.
  • Beans : Use any bean you prefer or whatever is in your pantry. Pinto beans are another great option.
  • Taco Toppings : Shredded green leaf lettuce, diced tomatoes, pico de gallo, guacamole, sour cream, avocado slices, chopped cilantro, sliced jalapeños, or try drizzling on some of this Cafe Rio Dressing.
  • I love serving these tacos with a side of my Instant Pot Spanish Rice or this Cilantro Lime Rice.

Want it spicy? Use a packet of hot taco seasoning, medium or hot salsa, add cayenne red pepper or chili powder, and/or serve with sliced jalapeños and hot sauce. You can also add a can of diced green chilies or chopped jalapeños into the slow cooker with the other ingredients.

Ingredients
  

  • 3-4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 jar (16 oz) salsa
  • 1 chicken taco seasoning packet
  • 1 can (15 oz) black beans drained & rinsed
  • 1 cup frozen corn

Instructions

  • Spray the slow cooker insert with cooking spray. Dump the salsa in and spread it around the bottom.

  • Lay the chicken breasts on top of the salsa. Sprinkle the chicken taco seasoning over top.

Nutrition Information : The amount listed is just for the fiesta chicken taco meat and does not include tortilla or toppings, since those will vary from person to person. This recipe makes enough for 16 tacos (when served with the small flour tortillas) or enough for 8 people with 2 tacos per person. 
Salsa : Use a salsa that you love! I prefer to use the fresher salsas that you can find in the refrigerated section of the deli area. 
Chicken Tip : If the chicken breast pieces are really big, I like to cut them in half before adding them into the slow cooker. This helps them get really tender and soft. Even if they are not big, I still do this because that’s what I prefer. So cut the chicken in half if wanted. 
Want It Spicy? : Use medium or hot salsa. A packet of hot taco seasoning. Add cayenne pepper or chili powder. Add a can of diced green chiles or chopped jalapeños into the slow cooker mixture. Top with shredded pepper jack cheese and/or sliced jalapeños and hot sauce.
