Ingredients
1/4cupbbq sauce(heaping 1/4 cup, any flavor)
1/4cupteriyaki sauce(heaping 1/4 cup)
4clovesgarlicminced or pressed
1tablespoonfresh grated ginger or ginger paste
1poundboneless, skinless chicken breasts(cubed into 1-inch chunks)
2cupsfresh pineapple chunks
1red bell pepper(cut into 1-inch chunks)
Instructions
In a large mixing bowl, stir together the bbq sauce, teriyaki sauce, garlic, and ginger until mixed well.
1/4 cup bbq sauce, 1/4 cup teriyaki sauce, 4 cloves garlic, 1 tablespoon fresh grated ginger or ginger paste
Add in the cubed chicken, pineapple chunks, and chopped red bell pepper and stir to coat everything in the sauce.
1 pound boneless, skinless chicken breasts, 2 cups fresh pineapple chunks, 1 red bell pepper
Add the chicken mixture to the basket of the air fryer and set it to cook at 400℉ for 11-12 minutes, stir the chicken mixture halfway through, and continue cooking until the chicken reaches an internal temperature of 165℉.

Serving Suggestions : My family loves this served over cooked white rice. You could also serve it over Rice Cooker Coconut Rice, brown rice, or cauliflower rice. Another option is to serve the pineapple chicken inside lettuce wraps; I like to use crunchy iceberg lettuce or butter lettuce. I also like to mix together additional bbq sauce + teriyaki sauce to drizzle over each serving.Ginger : I like to use the ginger paste that you can find in the refrigerated area of the produce section at the grocery store; near the fresh herbs and cold salad dressings and salsas. You can buy a fresh ginger knob, use a vegetable peeler to peel the outside off and then use a fine grater to grate it. Or use 1/2 teaspoon ground ginger instead of fresh ginger.
