Air Fryer Pineapple Chicken Recipe

Skip the takeout for dinner tonight and enjoy this stir fry made in the air fryer! This air fryer pineapple chicken is made with tender chunks of chicken, sweet juicy pineapple, red bell pepper all tossed in a sweet and savory sauce, and then served over rice.

All you need to do is cut the chicken into 1-inch cubes along with the red bell pepper and pineapple chunks. Toss it in an easy sauce of teriyaki sauce + bbq sauce and let the air fryer do it’s thing.

To make prep even easier try buying some already chopped fresh pineapple and chicken breasts at the grocery store.

Easy Ingredients Needed

  1. BBQ Sauce : Use your favorite bbq sauce! If you prefer sweeter flavors then go for a honey barbecue sauce or brown sugar barbecue sauce. Or try a spicy bbq sauce for increased heat in the recipe.
  2. Teriyaki Sauce
  3. Garlic Cloves : Use fresh garlic cloves or the equivalent in garlic paste from a tube or chopped garlic from a jar/container.
  4. Fresh Ginger : Buy a knob of fresh ginger and peel the rough exterior off with a vegetable peeler and then use the fine side of a box grater to grate the ginger. Alternatively, you can buy a tube of fresh ginger paste (this is what I do!) and measure out 1 tablespoon. If you want to use ground ginger then substitute with 1/2 teaspoon ground ginger powder instead of fresh ginger.
  5. Boneless, Skinless Chicken Breast : One pound is needed for this air fryer pineapple chicken recipe; which is equal to about 2 large chicken breasts.
  6. Fresh Pineapple Chunks : You can buy this already cut at the grocery store or cut a fresh pineapple yourself. I love using a pineapple corer and slicer to make it much easier.

How To Make Pineapple Chicken In The Air Fryer (Printable Recipe Card)

In a large mixing bowl, stir together the bbq sauce, teriyaki sauce, garlic, and ginger until mixed well.

Add in the cubed chicken, pineapple chunks, and chopped red bell pepper and stir to coat everything in the sauce.

Add the chicken mixture to the basket of the air fryer and set it to cook at 400 degrees F for 11-12 minutes, stir the chicken mixture halfway through, and continue cooking until the chicken reaches an internal temperature of 165 degrees F.

Serve over cooked white rice or rice of choice. If wanted, garnish with additional bbq sauce + teriyaki sauce mixed together.

Store any leftover pineapple chicken inside an airtight container, in the refrigerator, for up to 4 days.

Will Cooking The Chicken In The Sauce In My Air Fryer Cause A Big Mess?

The sauce will drip down into the bottom of your air fryer, however, it is easy to clean up by letting it soak in some warm soapy water in the sink. They do sell parchment paper liner for the air fryer basket to help keep messes down, but I don’t recommend using them because they block the air from being able to circulate. The air being able to circulate is what makes the air fryer different from cooking in the oven.

Can I Use Ginger Powder Instead of Fresh Ginger?

Yes, but you will only need 1/2 teaspoon ground ginger powder. They do sell freshly grated ginger paste in a tube that makes using fresh ginger in any recipe so easy! You can find it in the produce section, the refrigerated area, near the cold salad dressing and fresh herbs.

What Are Serving Suggestions For Pineapple Chicken?

My family loves this served over cooked white rice. You could also serve it over Rice Cooker Coconut Rice, brown rice, or cauliflower rice. Another option is to serve the pineapple chicken inside lettuce wraps; I like to use crunchy iceberg lettuce or butter lettuce. I also like to mix together additional bbq sauce + teriyaki sauce to drizzle over each serving.

  • 1/4 cup teriyaki sauce (heaping 1/4 cup)
  • 4 cloves garlic minced or pressed
  • 1 tablespoon fresh grated ginger or ginger paste
  • 1 pound boneless, skinless chicken breasts (cubed into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1-inch chunks)

Instructions
