Beef and Broccoli with Ground Beef

This Beef and Broccoli with Ground Beef is a quick, budget-friendly twist on the takeout classic. The savory garlic ginger sauce coats the ground beef and fresh broccoli perfectly, giving you big flavor in just 30 minutes. Serve it over cooked white rice for an easy weeknight dinner everyone will love.

Ingredients

  • 1 pound lean ground beef (I use 93/7)
  • 1 small sweet or yellow onion finely diced
  • cups beef broth
  • 1/4 cup soy sauce
  • 4 cloves garlic minced or pressed
  • 2 tablespoons cornstarch
  • 2 tablespoons honey
  • 1 tablespoon freshly grated ginger or ginger paste
  • ½ teaspoon ground black pepper
  • 3 cups small chopped broccoli florets

Instructions

  • In a large skillet, over medium-high heat, cook and crumble the ground beef and onion. Once the ground beef is no longer pink, drain off any excess grease from the skillet. 
  • In a small mixing bowl, whisk together the beef broth, soy sauce, minced garlic, cornstarch, honey, grated ginger, and black pepper until combined.
  • Add the sauce mixture and chopped broccoli to the skillet pan, cover the skillet with a lid, and cook for 5-8 minutes or until the broccoli is tender and soft to your preference. 
  • Remove the lid and cook for an additional 2-4 minutes until the sauce thickens.
  • Serve over cooked white rice and enjoy!

Notes

  • Ground Beef : Shaved beef is another option. If you want a really lean meat option you can use ground turkey. 
  • Onion : I like using a sweet onion but a yellow onion or white onions works well too. A white onion will have a sharper, spicier onion flavor while a yellow onion is more mild. 
  • Beef Broth : I use full salted beef bone broth (Kettle & Fire brand is what I like). Other options include water + beef bouillon, low sodium versions, or beef stock.
  • Soy Sauce : The full salted version can be used (my preference) or the reduced-sodium soy sauce. For a gluten-free option, use coconut aminos or a gluten-free soy sauce. 
  • Garlic : Use fresh garlic cloves that have been minced or pressed, use garlic paste, or chopped garlic from a jar. 
  • Ginger : Buy a piece of fresh ginger and use a vegetable peeler to peel the rough exterior. Then grate it on the fine side of a grater. Another option is to buy a tube of fresh ginger paste and measure out the amount needed. 
  • Honey : Other options include maple syrup, agave, or packed light brown sugar. You can add more or less sugar (or other sweetener) depending on preference. I have used honey + brown sugar when making this recipe and that combo is really delicious. So I will use the 2 tablespoons honey and then add an additional 1 tablespoon packed light brown sugar. This will make it sweeter, but the combination is really good. Or you could use half honey + half light brown sugar.
