In a small mixing bowl, whisk together all the caesar dressing ingredients until well combined and smooth. Set aside or place it in the fridge so it can chill for a few minutes.

In a separate larger bowl, add the chicken, chopped romaine lettuce, chopped croutons, parmesan cheese, and the Caesar salad dressing (set aside from earlier). Stir everything together until well combined and all the ingredients are coated in dressing.

Lay a large flour tortilla on a cutting board. Place a scoop of the Caesar salad mixture onto the tortilla, and add some of the chopped tomatoes. Roll up burrito-style and cut the wrap in the middle for serving. Enjoy!
