Easy Mississippi Mud Brownies

Easy Mississippi Mud Bars are insanely delicious with layers of chocolate brownie + gooey marshmallows + pecans + chocolate fudge drizzle. Simple to make with a boxed brownie mix - everyone is sure to fall in love with this Mississippi Mud dessert.

Ingredients

Brownies

  • 1 box (18.3 oz) fudge brownie mix
  • ingredients required by brownie mix (eggs, water, oil)
  • 3 cups mini marshmallows
  • 1/3 cup chopped pecans

Chocolate Fudge Topping

  • 1/2 cup (1 stick) butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup whole milk
  • ¼ teaspoon kosher salt
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to the temperature indicated on the back of the brownie mix box. Spray a 9x13 baking pan with cooking spray, or line with parchment paper, and set aside. 
  • Prepare the brownie mix according to the package instructions, using a large bowl and an electric mixer on medium speed. Pour the brownie batter into the prepared pan and bake according to the time specified on the back of the brownie mix box.

  • Remove the brownies from the oven and immediately sprinkle the miniature marshmallows evenly over the hot brownies. Return to the oven and bake for 2-3 minutes or until the marshmallows are soft and gooey.
    3 cups mini marshmallows
  • Remove the pan from the oven and sprinkle the chopped pecans over top the gooey marshmallows.
    1/3 cup chopped pecans
  • Let the brownies cool, inside the pan on a cooling rack, to room temperature. 
  • In a medium saucepan, over medium heat, add the butter and let it melt. Once melted, whisk in the cocoa powder, milk, and salt. Bring to a boil.

  • Once boiling, remove from the heat and stir in the powdered sugar and vanilla extract until smooth and combined well.

  • Drizzle the warm chocolate topping over the marshmallows and pecans. Allow the chocolate to set for a few minutes before cutting into squares and serving.
