Mississippi Mud Brownie Recipe (Quick & Easy Mississippi Mud Bars)

Mississippi mud brownies start with an easy brownie base (a boxed brownie mix), next is a marshmallow layer with pecans and gooey marshmallows, and a semisweet chocolate drizzle to finish things off. 

Mississippi mud bars are a decadent dessert and a classic southern dessert that everyone loves – with it’s combination of brownie + gooey marshmallows + crunchy pecans + a sweet chocolate drizzle – these bars are sure to please anyone. And they couldn’t be easier to make with a boxed brownie mix and a few other simple ingredients.

Simple Ingredients Needed

There are three easy parts to this brownie recipe – it starts with a simple boxed brownie mix plus the ingredients called for. A marshmallow layer and then a chocolate mixture that gets drizzled over top. 

  1. Brownie Mix : Use your favorite fudge or chocolate brownie mix for the base of the brownies. You could also make homemade brownies as the base as well – this is my family’s favorite recipe that turns out thick and cake-like brownies. So if that’s your thing then you will love it! You will prepare the brownies according to the directions on the back of the box.
  2. Miniature Marshmallows
  3. Chopped Pecans
  4. Butter
  5. Whole Milk
  6. Unsweetened Cocoa Powder
  7. Powdered Sugar
  8. Vanilla Extract

How To Make Easy Mississippi Mud Bars With A Brownie Mix

Preheat the oven to the temperature indicated on the back of the brownie mix box. Spray a 9×13 baking pan with cooking spray, or line with parchment paper, and set aside. 

Prepare the brownie mix according to the package instructions, using a large bowl and an electric mixer on medium speed. Pour the brownie batter into the prepared pan and bake according to the time specified on the back of the brownie mix box.

Remove the brownies from the oven and immediately sprinkle the miniature marshmallows evenly over the hot brownies. Return to the oven and bake for 2-3 minutes or until the marshmallows are soft and gooey. Remove the pan from the oven and sprinkle the chopped pecans over top the gooey marshmallows. Let the brownies cool, inside the pan on a cooling rack, to room temperature.

In a medium saucepan, over medium heat, add the butter and let it melt. Once melted, whisk in the milk, cocoa powder, and salt. Bring to a boil. Once boiling, remove from the heat and stir in the powdered sugar and vanilla extract until smooth and combined well.

Drizzle the warm chocolate topping over the marshmallows and pecans. Allow the chocolate to set for a few minutes before cutting into squares and serving.

Can I Toast The Pecans?

Yes, toasting the pecans will give the bars a nutty roasted flavor that is really good. To toast pecans, spread them onto a baking sheet that has been lined with parchment paper. Bake in a preheated oven at 350 degrees F for 5-7 minutes or until fragrant. Stir the pecans 2-3 times during the cook time to ensure that they are not burning. 

Which Brownie Mix Is Best To Use?

Use your favorite brownie mix! Milk chocolate, dark chocolate, chocolate fudge, etc. They all will work well in this easy brownie recipe. Also, make sure that you are using a family-size brownie mix that bakes up in a 9×13 pan. 

How Do I Get Clean Cuts When Cutting Brownies?

Allow the bars to cool completely before cutting. You can also stick the bars in the fridge before cutting if wanted. Allowing the bars to cool completely will help the chocolate topping set properly, making it easier to cut clean, neat bars. Rinse the knife with warm water between cuts for ultra clean slices if wanted.

Recipe Tips For Mississippi Mud Brownies

  • Don’t overbake the brownies! Overbaking anything can cause it to dry out – plus, the brownies will cook for 2-3 more minutes once the marshmallow are added. The brownies need to be cooked through (after the first baking time) but just make sure that you don’t leave them in there past that time. As the brownies cool they will also cook slightly more in the warm pan.
  • Adjust the consistency of the chocolate fudge icing by adding more powdered sugar for a thicker consistency, or add more milk for a thinner consistency. The goal is a pourable but not too runny chocolate sauce. 
  • Add some mini chocolate chips to the brownie batter for added chocolate! I suggest using 1/2 cup of mini chocolate chips if you’re wanting to add chocolate chips to the brownies.

  • 3 cups mini marshmallows
  • 1/3 cup chopped pecans

Chocolate Fudge Topping

  • 1/2 cup (1 stick) butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup whole milk
  • Ā¼ teaspoon kosher salt
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
