Lemon Yogurt Fruit Salad

Lemon Yogurt Fruit Salad is loaded with fresh summertime fruit - strawberries, pineapple, blueberries, kiwi, and mandarin oranges - covered in a simple honey lemon yogurt dressing with fresh lemon juice.

Ingredients

  • 2 cups halved strawberries
  • 2 cups chopped fresh pineapple
  • 2 cups blueberries (rinsed & patted dry)
  • 4 kiwis (skin peeled & chopped)
  • 1 can (15 oz) mandarin oranges (drained well & patted dry)
  • 1 container (6 oz) lemon yogurt
  • 1 tablespoon honey
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  • Add all the fresh chopped fruit into a large bowl or a serving bowl.
    2 cups halved strawberries, 2 cups chopped fresh pineapple, 2 cups blueberries, 4 kiwis, 1 can (15 oz) mandarin oranges
  • In a small bowl, whisk the lemon yogurt, honey, and fresh lemon juice until combined. Pour the dressing over top the fruit in the larger bowl. Stir everything together, gently, until everything is well coated.
    1 container (6 oz) lemon yogurt, 1 tablespoon honey, 1 tablespoon freshly squeezed lemon juice
  • I recommend serving it right away OR you can cover the bowl with a lid and refrigerate for up to 2 hours before serving if you prefer time for the dressing to chill.
    * Tip - I like the dressing chilled so I will make it ahead of time and store it in the fridge (up to 24 hours) and then when I am ready to prepare and serve the salad, I just add the chilled mixed dressing right into the fruit and serve!

Notes

  • Make sure the fruit is well drained and patted dry with a paper towel before adding it into the bowl. You don't want to add extra moisture into the salad. For the Mandarin oranges and blueberries, I will pat them dry with paper towels before adding them into the bowl.
  • If you want a sweeter taste, or less sweet taste, adjust the honey accordingly.
  • Use fresh lemon juice for the best flavor and not bottled lemon juice.
  • Switch up the flavor of yogurt - any fruit yogurt would be so good in this recipe, such as mango, pineapple, strawberry, blueberry, etc.
  • A trick for the pineapple is to buy some freshly cut pineapple chunks or spears from the grocery store. This is way easier than cutting a fresh pineapple and dealing with all that.
  • A one pound container of strawberries is enough for this recipe.
  • If you are wanting to transport this fruit salad, or want to make it ahead of time, prepare the fruit part in a large bowl and then prepare the dressing in a separate bowl. Take the two bowls with you and assemble it and mix it together right before serving. I sometimes will do this anyways because I prefer when the dressing is really chilled for when I serve it.
  • Another variation is to use key lime yogurt and fresh lime juice. Or use orange cream yogurt and fresh squeezed orange juice.
