Pizza Chicken

Pizza Chicken is baked in the oven and has all the classic pepperoni pizza flavors that the whole family loves! Chicken breasts are topped with an Italian seasoning blend, pizza sauce, two kinds of cheese, and crispy pepperoni.

Ingredients

  • 2 large boneless, skinless chicken breasts (about 2 pounds)
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon kosher salt (more or less to taste)
  • ¼ teaspoon black pepper
  • 1 jar (14 oz) pizza sauce
  • 8 ounces mozzarella cheese shredded
  • 1/4 cup grated parmesan cheese
  • 15-20 pepperoni slices

Instructions

  • Preheat the oven to 350℉. Spray a 9x13 baking dish with nonstick cooking spray. 
    * If needed, use a rimmed cookie sheet for more room. If you want more serving, this recipe can accommodate up to 3 chicken breasts (which equals 6 pieces when cut in half horizontally).
  • Cut each chicken breast in half, horizontally lengthwise, so you end up with two thinner pieces of chicken per breast. Place the chicken into the prepared baking dish.
    * If the chicken breast you are using are already thin & small, then no need to cut them in half and you can just use 4 of them. My family just prefers thinner pieces meat so I always cut the chicken in half.

  • In a small bowl, stir together the Italian seasoning, garlic powder, onion powder, salt, and pepper. Sprinkle the seasoning mix on both sides of each chicken breast, saving about 1 teaspoon of the seasoning mix for later.

  • Spread the pizza sauce over the top of the chicken. Sprinkle the mozzarella cheese, parmesan cheese, and remaining seasoning mix over the top of the sauce. Arrange the slices of pepperoni over the cheese. 
    1 jar (14 oz) pizza sauce, 8 ounces mozzarella cheese, 1/4 cup grated parmesan cheese, 15-20 pepperoni slices
  • Cover the baking dish with aluminum foil and bake for 15 minutes. Uncover and bake for an additional 20 minutes until the cheese has melted and the chicken has reached an internal temperature of 165℉.

Notes

Cheese Tip : I recommend buying an 8 ounce block of mozzarella cheese and using a box cheese grater to shred it yourself. It melt much smoother and creamier compared to using bagged pre-shredded cheese. Also it's best to use the cheaper grated parmesan cheese (the shelf stable stuff) because it does not burn in the oven like freshly shredded parmesan does.
