Turkey Chili Taco Soup is loaded with all the best southwest flavors - with lean ground turkey, chili beans, corn, tomato, and taco seasonings. It's a delicious and hearty chili taco soup and so yummy topped with cheese, sour cream, and crushed tortilla chips or Fritos corn chips.
In a large soup pot or ceramic dutch oven, over medium-high heat, add the olive, ground turkey, onion, bell pepper, and salt. Cook and crumble the ground turkey until it's no longer pink. About 5-8 minutes. Remove any excess liquid or grease from the pot.
1 tablespoon olive oil, 1 lb ground turkey, 1 yellow onion or sweet onion, 1 red bell pepper, 1 teaspoon kosher salt
Add the remaining ingredients into the pot and stir together. Bring to a boil. Once boiling, reduce the heat to medium-low and cover the pot with a lid.
1 can (14.5 oz) beef broth, 1 can (15 oz) chili beans, 1 can (15 oz) black beans, 1 can (15 oz) pinto beans, 1 can (14.5 oz) petite diced tomatoes, 1 can (8 oz) tomato sauce, 1½ cups frozen corn, 1 cup salsa, 1 packet (1 oz) taco seasoning, 1 teaspoon cumin, 1 teaspoon chili powder, ½ teaspoon oregano
Let simmer for at least 30 minutes, while stirring occasionally, to make sure it's not burning.
Serve warm with toppings of your choice. We love sour cream, shredded cheese, and tortilla chips or Fritos Scoops corn chips.
Ideas To Make It Spicy :Use a spicy or hot taco seasoning packet. Use medium or hot salsa. Add additional chili powder and/or cayenne red pepper. Add a can of diced green chilies or jalapeños in with the other canned ingredients. Use shredded Pepper Jack cheese and/or sliced jalapeños as topping options. Use a can of Rotel instead of petite diced tomatoes.Ground Turkey : I think this chili tastes best when using a higher fat ground turkey like 85/15. They have leaner (96/4) but it does not have the same flavor as the higher fat one. Beef Broth : I love using the Kettle Fire brand beef bone broth. You can use beef stock, beef broth, water + bouillon, etc. Also depending on preference or dietary needs you can use reduced-sodium version of beef broth. I prefer the flavor when using full salt, regular beef broth or stock (or bone broth).
