Every Sunday at our house is chocolate chip cookie day! It’s something we all look forward to and my kids love helping in the kitchen. Especially my girls. They pull up some chairs and fight over who gets to pour what into the bowl 🙂

I am one of those people that loves cooking new recipes, finding new recipes, and adding more family favorite recipes to our list of favorites. Even though I might already have a favorite chocolate chip cookie recipe, that won’t stop me from always looking for a new one to try. Because we cook cookies every Sunday, we try lots and lots of different recipes.

I have to say that I was hesitant because of the bisquick but I was also very curious. I am here to say that these are, hands down, one of my favorite chocolate chip cookies. They are so thick and extra chewy, soft-baked, and have such a sweet chocolatey flavor. Seriously, they are really good and they’re way too easy not to try.

Plus, I noticed in the store that Bisquick has a gluten-free mix so this recipe can be adapted for gluten allergies too!

These don’t brown much at all so don’t rely on that to know if they’re cooked or not. My cookies are perfectly cooked at 9 minutes. They will be pale, puffy, and they won’t look “wet” in the middle like traditional chocolate chip cookies. 

I prefer to roll the dough into a ball because as the cookies cook they cook up in perfect little circles. And if you know me at all, you know that I want my food to look pretty. Which is why I am in love with these cookies because they look so pretty 🙂 

Please tell me I’m not the only one like that?! haha, I probably am.

Easy Bisquick Chocolate Chip Cookies


Servings 2 dozen cookies
Easy bisquick chocolate chip cookies are soft-baked, thick, super chewy and so easy to make! All you need are 6 ingredients and one of them is convenient bisquick. It's a fast replacement for all the dry ingredients. These chocolate chip cookies are surprisingly one of the best versions of the classic cookie. 

Ingredients
  

  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups Bisquick baking mix
  • 1 cup milk chocolate chips

Instructions

  • Heat oven to 350 degrees. Prepare two cookie sheets by lining with parchment paper or spraying with cooking spray.
  • In large bowl, beat together the butter and brown sugar with electric mixer until light and fluffy.
  • Beat in vanilla and egg.
  • Add Bisquick mix and beat on low speed until combined.
  • Stir in chocolate chips.
  • Take about 2 tablespoons of dough and roll into a ball with your hands. Place on the cookie sheet.
  • Bake 8 to 10 minutes. Cookies will stay pale but they will look puffy.
  • If wanted, press a few additional chocolate chips onto the tops of the cookies right after they come out of the oven.
  • Cool on cookie sheet for 5 minutes and then move to a cooling rack to cool completely.

    Made these today and they taste great. Unfortunately they’re not at all thick. In fact if it wasn’t for the chips they would be about as thick as the parchment paper I used. What did I do wrong?

      Oh shoot! The only thing I can think of is maybe the dough was not rolled into a ball when you placed them on the baking sheet?? Rolling the dough between your hands into a ball helps them bake up puffier and thicker. Or, maybe the butter was too soft/ somewhat melted?? Those are the only things I can think of. So sorry they did not turn out for you.

        Thanks for getting back to me. In fact the butter was 3/4 melted when I put it in the recipe. All my butter was in the fridge and I wanted cookies now lol so microwave to the rescue. Gonna try it again with SOFTENED butter this time. Btw I did roll the batter before putting on the sheet. I’ll let you know how it comes out. Thanks again.

          I hope they turn out for you the second time. A tip for the softened butter (this is what I do all the time) place the butter (still in the wrapper) into the microwave and press the 30 sec cook button, and then every 3 seconds turn the butter stick. It usually takes about 10-15 seconds total. I hope that makes sense. Cook for 3 seconds, turn the butter to a different side, cook for 3 seconds, turn the butter to another side, etc….

    These cookies are delicious. When I tried to roll them in my hand, they stuck to it. Did you use something on your hands so they wont stick? THank you so much for the recipe.

      I always like to spray my hands with some cooking spray. I also use a small cookie scoop to scoop the dough and then drop it into my hands and roll it. So maybe that also helps them not be too sticky because I’m not grabbing the dough and then rolling.

      1. I just made the dough- very excited! I always melt my butter completely when I’m making cookie dough- so after I roll the dough I usually put it in the fridge for a few hours to firm up again before baking- this helps ensure they don’t come out flat. I did the same with these cookies- hoping it works but will keep you posted!

    Has anyone tried freezing this dough? My husband is a cookie monster but I HATE baking lol. If I can make large batches of things and freeze some I’m a happy camper lol

    1. I’m pretty sure I’ve read you can refrigerate for up to one week but you can most definitely freeze. You may want to google because I forget how many months you can freeze for.

  6. I used a heaping soup spoon, moistened my hands with oil, and rolled the cookies into balls. The recipe made 18 somewhat flat cookies about 3″ in diameter. Sweeter than I like; I would cut the sugar to 3/4 cup.

    Wondering if you used light or dark brown sugar?

      You can use either one but I always use light brown sugar. Dark brown sugar has a stronger molasses taste to it. Light brown sugar is more common.

    A recipe which includes butter should indicate the addition of salt if using unsalted butter. These cookies (I followed the directions precisely) are greasy and fragile – they fall apart). Not sure if the recipe requires less butter or more Bisquick?

    I made these today and they turned out perfectly plump and delicious!! I let the butter sit on the counter to soften for about 5 hours – no flat cookies here. Looking forward to making them again. Thanks for a great recipe!

    These cookies are delicious, and so easy! I’ve made them several times now and they always come out perfect. This recipe makes two dozen cookies for me. I kind of doubted that they would be completely cooked through without being slightly brown on the edges, but they were! For those who like a crispier cookie: I let them brown a bit—the cookies were the perfect crispiness, not dry, and very yummy. Thanks for a terrific recipe.

    Hi there butter is kinda expensive..so I have country crock in the fridge can I substitute this 🙂

      There really is no substitute for butter. If you want to you can try using country crock but I would not recommend it.

  13. I made these cookies yesterday and they turned out just so awesome! I froze most of the dough. I just baked more cookies from frozen a day later by special request. What a perfect recipe!! I must admit that I used sugar in the raw and granules did not incorporate completely. Next time I’ll use light brown soft sugar.

  14. Loved the taste but not the cookies. tried it twice, followed exactly and both times they spread into one giant cookie😓

      I’m sorry! The usual cause for cookies spreading is not enough flour to hold the fat together. Maybe try spooning and leveling the flour if you try the recipe again. Hopefully that helps 🤞🏻
