Christmas always creeps up on me. And like really fast! I have so many plans of fun Christmas goodies to share with you all but I have no time to test them for the blog. And don’t get me started on dinner, haha 🙂 I have had so many dinner recipe fails in the past few weeks. I don’t know what’s been happening, but I cannot make dinner to save my life recently. 

Hopefully it’s just all the Holiday stress that is making me crazy. I am kind of excited for the New Year when things always tend to wind down again.  And, maybe I will actually be able to make dinner! And I’m also looking forward to not having to be out until midnight trying to get all the Christmas shopping done. Yes, that was me a couple times this past week. Out until midnight. It was all fun and games until my alarm went off at 5:45 am. I realized that I am too old for all that fun 🙂

Classic cracker toffee is always everyone’s favorite around the Holidays. It has that perfect sweet & salty crunch to it and is crazy addictive. I love using Ritz crackers as the base to my toffee. I know people generally use Saltine crackers, but I LOVE the buttery flavor of the Ritz crackers.

Plus, I always have Ritz crackers in the pantry. Saltines not so much.

You will need about 2 sleeves of Ritz crackers for this recipe. Cover your cookie sheet with a layer of crackers and then prepare an easy caramel sauce on the stove top. Pour that over the crackers and spread out. Then it bakes in the oven until it’s caramelized and bubbly. Immediately after the oven, sprinkles chocolate chips. They will melt on their own and then spread it out and decorate with sprinkles. 

The recipe calls for milk chocolate chips so please be sure that is what you are using. You need the sweetness to balance out the salty and buttery flavors of the crackers.

The hardest part will be waiting or at least 2 hours for the toffee to cool down and the chocolate to set. Once it is, you just use a knife and randomly cut it. No worries about trying to make it into perfect squares. Its toffee so it’s supposed to random little shapes 🙂 

I prefer to store the leftover toffee at room temperature. Covered on a plate of course. You could also store it in the fridge too! Happy baking friends. Thanks for stopping buy.

Ingredients
  

  • 2 sleeves Ritz crackers
  • 1 cup (2 sticks) salted butter
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 bag (11 oz) milk chocolate chips
  • Christmas sprinkles

Instructions

  • Heat oven to 350°. Prepare a cookie sheet (about 12" x 18") and line with parchment paper or tin foil. Lightly spray with cooking spray.
  • Place crackers in a single layer on cookie sheet.
  • In medium saucepan, over medium heat, combine butter, brown sugar, and salt. Heat to boiling, stirring occasionally. Once boiling, let boil for 6-7 minutes. It will be thicker and much darker in color.
  • Remove from heat and stir in vanilla extract.
  • Pour over the crackers on the cookie sheet. Use a spatula or back side of a silverware spoon to spread it out evenly over the crackers.
  • Bake for 12-15 minutes, or until bubbly, thickened, and darker in color. Immediately after baking sprinkle the bag of chocolate chips over the toffee and let sit for 5 minutes. Spread chocolate evenly over crackers and decorate with Christmas sprinkles.
  • Let cool for 2 hours so it can come together and harden up. Break into pieces.
  • Store leftovers covered at room temperature or in the refrigerator.

Notes

There are 4 sleeves of Ritz crackers in a standard size box. You will just need 2 of them. It's about 45 crackers.

    Hi – great recipe – say it on Pinterest. Is there a missed step or a step out of order in the above? Step 5 – cook for 15 mins. Cook what? The toffee step (#3) says 6-7 mins. I want to try this, but I am not clear as to the exact steps.

      I just went and checked it. The steps are correct. You boil the caramel mixture on the stove top for 6 minutes. Then drizzle that over the cracker layer that you lined your cookie sheet with. Then, you put that in the oven for 15 minutes.

  3. I followed directions and burnt it like crazy in the oven with these we exact directions… Anyone else have that issue?

      I actually had someone else mention that too. It sounds like you just need to cook it for less time as all ovens are different. I have changed the recipe to include the bake time be 12-15 minutes. The caramel should be darker in color, bubbly, and very thickened once the cook time is done. Definitely not burnt 🙂 So sorry!

        The cookie sheet if it is dark metal it also heats faster and hotter in general.
