Funfetti Cake Batter Rice Krispie Treats (Rice Krispies with Sprinkles)
Funfetti Rice Krispie treats are a colorful twist on traditional Rice Krispie treats. The classic combination of buttery melted, gooey marshmallow and crispy rice cereal gets upgraded with rainbow sprinkles and cake batter extract – which gives it a light cake batter flavor and matches the ‘funfetti’ theme.
It’s a birthday-cake inspired dessert that kids can even help make! They’re perfect for bake sales, after school snacks, or switch up the sprinkle color and make them for any holiday or celebration.

Only 6 Simple Ingredients Needed
- Butter : You can use salted butter or unsalted butter; whichever you prefer baking with. I use salted butter as I love the balance that the tiny bit if salt in the butter gives to the sweet ingredients.
- Mini Marshmallows : Two (10 oz) bags of mini marshmallows is what the recipe calls for.
- Cake Batter Extract : This gives the Rice Krispies that ‘cake batter’ or ‘funfetti’ sweet flavor. You can find this in the grocery store by the other extracts, or if you can’t find it, substitute vanilla extract. Or you could so half vanilla extract + half cake batter extract.
- Rice Krispies Cereal
- Rainbow Jimmies : The ‘jimmies’ are the long, stick shaped sprinkles and not the little ball shaped sprinkles (called ‘non-pareils’). The jimmies won’t bleed into the warm cereal mixture which is why the recipe calls for those ones specifically.

How To Make Funfetti Rice Krispies with Sprinkles (Printable Recipe Card)
Prepare a 9×13-inch baking pan by spraying with nonstick cooking spray, or parchment paper, and set it aside. I spray the pan and then line it with parchment paper. The spray helps the paper adhere and stay in place, and parchment paper makes it easy to lift out the treats later to cut them.
In a large saucepan or pot, over low heat, melt the butter.
Once melted, add the two bags of mini marshmallows and stir constantly until smooth and entirely melted. Do not increase the heat! Low and slow is what you want.
Remove the pan from the heat and stir in the cake batter extract.
Add in the Rice Krispies cereal and the rainbow sprinkles, and gently stir everything together until the cereal is evenly coated. Be very careful not to overmix, or to stir too aggressively, as the treats could lose their light and airy texture.

Dump the mixture into the prepared pan, and use a buttered spatula or wax paper, to gently press the mixture into the pan in an even layer. You want to press down enough to create a thick, even layer but don’t press too hard became you still want the treats to be light and fluffy.

Place the almond bark in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each one, until completely melted and smooth. Place the melted almond bark into a Ziploc bag with a tiny corner snipped. Drizzle it over the top of the treats in long lines, zig-zags, or any pattern you would like. Immediately sprinkle some additional sprinkles on top of the wet chocolate.
Let the treats cool completely at room temperature and until the almond bark sets, about 20-30 minutes, then use a sharp knife to cut into squares. Enjoy!


How To Store and Freeze Rice Krispies Treats
- Room Temperature : Store cooled and set treats in an airtight container, at room temperature, for up to 5 days.
- Freezer : Did you know that Rice Krispie treats actually freeze really well?! Wrap individual treats in plastic wrap and then place them inside a freezer-safe container or bag. They can be frozen for up to 2 months. To serve, thaw at room temperature for 30-60 minutes. The almond bark drizzle will soften a bit and not look as ‘clean’ but they will still taste yummy.

- Cake batter extract adds a fun, sweet flavor similar to birthday cake which matches the funfetti theme. If you prefer not to use, you can use vanilla extract instead OR use half vanilla extract + half cake batter extract (I do this and love it, not as much cake batter sweetness but still subtle).
- White almond bark is best to use because it melts easily and harden nicely and quickly for a smooth drizzle that holds its shape.
- Swap out the rainbow sprinkles for any holiday or celebration!
- Use rainbow ‘jimmie’ sprinkles which are the longer, line shaped sprinkles. The little ball shaped sprinkles (called ‘non-pareils’) bleed color into the marshmallow mixture, so I don’t suggest adding them in with the marshmallows. You can decorate the tops of the treats with the little ball ‘non-pareil’ sprinkles (I do this because I prefer the look of the little ball sprinkles better).
- I like to spray the pan with cooking spray and then lay parchment paper in it, making sure to leave some overhang on the sides. Doing it this way helps the parchment paper stay in place and the overhang makes it easy to lift the treats out and cut into even squares for serving.
