BAKED CAESAR CHICKEN- baked chicken coated with caesar dressing and a crispy breading!

As part of my weekly meal planning I always include at least one dinner that is a baked chicken recipe + a vegetable side. It’s a lighter, healthier meal compared to the heavier things we have during the week like Mexican food, pasta, etc. It’s one of those dinners you can feel really good about eating. My kids, surprisingly enough, actually LOVE baked chicken with some sort of crunchy coating. I’m thinking they like it so much because it reminds them of their favorite “chicken” nuggets at McDonalds 🙂

I also love this chicken because it is easy and you can make it at least 2x with the same ingredients. You will have extra of the panko breadcrumbs, garlic croutons, and caesar salad dressing which is perfect for another meal! All you will need to buy are more chicken breasts.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup parmesan cheese, grated or shredded
  • 1/2 cup panko bread crumbs
  • 3/4 cup garlic croutons, crushed finely
  • 1 cup caesar dressing


  1. Heat oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
  2. Combine parmesan cheese, panko bread crumbs, and crushed croutons in a pie plate or other shallow plate.
  3. Pour the caesar dressing into a shallow plate.
  4. Take one chicken breast at a time and dip, both sides, into the caesar dressing. Then coat only one side in the bread crumb mixture.
  5. Place in the baking dish, bread crumb side up.
  6. Bake for 25-30 minutes or until internal temperature reaches 165 degrees.


** It is important to only coat ONE side of the chicken breast in the bread crumb mixture because if you coat both sides,the bottom side will be a soggy, gooey mess.

** The original recipe called for regular breadcrumbs but I found that they stay soggy and do not get crispy while baking. You could use regular bread crumbs in place of the panko bread crumbs, but it will not be as crispy.

** If my chicken breasts are thick, I will slice them each in half vertically. If I do this I need slightly more of the dressing and breadcrumb mixture to coat all of them.

    I am always on the look out for different ways to make chicken. We tend to eat it a lot and we always get tired of the same ‘ol ways. I pinned this so I can try it out in our dinner rotation! I love the idea of using croutons!
