Crockpot Buffalo Chicken Loaded Baked Potatoes slow cook together right in the crock pot – a creamy, spicy buffalo chicken gets stuffed inside a tender, soft baked potato. Finish it off with ranch and sour cream for an amazing loaded baked potato with buffalo chicken flavors.

Crock Pot Buffalo Chicken Baked Potatoes

You are going to love this complete meal in one where everything cooks in the slow cooker together! Yes, even the potatoes.

I love making baked potatoes in the slow cooker so I figured why not make it ‘loaded’ style and also cook up a delicious topping?!

In the bottom of the slow cooker is the buffalo chicken mixture – boneless, skinless chicken breasts cook with ranch seasoning, cream cheese, buffalo sauce, and chicken broth. Place a layer of parchment paper or foil on top, and then add the fork pricked potatoes for the top layer. Everything cooks to perfection in about 7 hours!

You’ll end up with perfectly soft & tender baked potatoes, and then a tender shredded buffalo chicken mixture that gets put on top of the baked potatoes.

Ingredients Needed

  1. Boneless, Skinless Chicken Breasts : I recommend using fresh chicken breast, or completely thawed frozen chicken breasts, to avoid to much excess moisture in the crockpot.
  2. Ranch Seasoning Mix : Just dump in the dry ranch seasoning powder from one packet.
  3. Cream Cheese : Cut the cream cheese into small cubes before adding it into the crockpot.
  4. Buffalo Sauce : To make this a milder version try using a mild buffalo sauce. For a spicier version use Frank’s Red Hot Wings Buffalo sauce. I always use the Sweet Baby Ray’s brand mild buffalo sauce.
  5. Chicken Broth
  6. Russet Potatoes : If you are feeding more people, I have found that even with 6 potatoes, there is still plenty of the buffalo chicken for all of them. Depending on your crockpot size, you can easily fit 4-8 potatoes inside the crockpot, but it also depends on the size of the potatoes you are using.
  7. Shredded Cheddar Cheese : For best results, get a block of cheese and shred it yourself using a box cheese grater.
  8. Sour Cream : I actually like to combine the sour cream + ranch and then dollop some on each potato. You can also serve them separately if not everyone likes both sour cream and ranch.
  9. Ranch Dressing : Use your favorite ranch salad dressing or try my Homemade Ranch Dressing.

How To Make Buffalo Chicken Loaded Baked Potatoes In The Slow Cooker (Printable Recipe Card)

Place the chicken breast into the bottom of the slow cooker and sprinkle the dry ranch seasoning powder over top.

Add the cubed cream cheese, buffalo sauce, and chicken broth.

Cover the chicken mixture with a sheet of parchment paper.

Use a knife or a fork to poke holes all over each potato. Place the potatoes inside the slow cooker on top of the piece of parchment paper.

Cover with the lid and cook on LOW heat for 7-8 hours.

Remove the potatoes and the piece of parchment paper from the slow cooker.

Transfer the chicken breasts to a small plate and shred it with two forks.

Add 1 cup of the shredded cheddar cheese into the slow cooker and stir to combine until it is melted.

Add the shredded chicken back into the slow cooker and stir everything together until well combined.

Cut open the potatoes (lengthwise) and fill each one with some of the shredded buffalo chicken mixture. Top each potato with some of the remaining shredded cheese, add some sour cream and ranch dressing, and sliced green onions.

How To Store Leftovers

I recommend storing the buffalo chicken and the baked potatoes separately. Place the leftover shredded buffalo chicken mixture into an airtight container and store in the fridge for up to 3-4 days. Place the baked potatoes inside a gallon sized Ziploc bag, or put them inside a covered container, and store in the fridge for up to 3-4 days.

You can reheat the potatoes and the shredded buffalo chicken in the microwave, and then assemble the baked potato. You can also reheat the buffalo chicken mixture on the stove top, over medium heat, until heated through.

Can I Make Any Substitutions?

  • Ranch Dressing : Bleu cheese dressing is another excellent choice to top the potatoes with.
  • Sour Cream : You can use plain Greek yogurt in it’s place for a lower-fat option.
  • Chicken Broth : Water + chicken bouillon is a great substitute for broth.
  • Chicken Breasts : Use boneless, skinless chicken thighs for a juicer option. Thighs are also fattier, which means you will end up with more grease/fat in the slow cooker. Keep that in mind if using them.
  • Cheddar Cheese : Any shredded cheese works great here! Pepper Jack for more spice, Colby Jack, Monterey Jack, or any variety of cheddar cheese (mild, medium, or sharp).
  • Cream Cheese : I prefer the flavor and thicker creamy texture of full-fat cream cheese, but you can use reduced-fat or fat-free if wanted.

Do I Have To Cook The Potatoes In The Same Crockpot As The Chicken?

No, you do not have to. If you are worried about the potato being in close contact with the raw chicken, here are a few options for you.

  • Cook the potatoes in a separate slow cooker. If you have two slow cookers, make the buffalo chicken in one and add the potatoes to the other. You will still cook both slow cookers for 7-8 hours.
  • You can also make the potatoes in the oven or microwave, and cook the buffalo chicken mixture by itself in the slow cooker.

Notes

I love making my Homemade Ranch Dressing for this recipe. 
Serving Size : I use 3 medium sized chicken breasts + 6 medium sized potatoes when I make this for my family. There is plenty for everyone. If you are feeding a smaller group, then use 2 chicken breasts and 4 potatoes. Just make sure the potatoes will all fit in your slow cooker. 
Buffalo Sauce : For a milder spice, I use the Sweet Baby Ray’s Mild Buffalo Sauce and my family loves it. For more spice, use something like Franks Red Hot Buffalo Sauce. If you want a much milder version, then reduce the amount of buffalo sauce used; if reducing buffalo sauce then you may want to add an additional 1/4 cup chicken broth.
