Avocado, Corn & Tomato Salad

An easy, light, and refreshing salad! Perfect for a light lunch, BBQ, potluck, or as a side for dinner! This will be one of the easiest and simplest dishes you will make, and will quickly become a favorite.

 Avocados are not something that I grew up on. I don’t remember having one until I was married and really began to love cooking and trying new foods. I have definitely made up for lost time! I am always finding new recipes that use avocados. Like this one. It’s so easy, uses simple ingredients, but it is insanely delicious and addictive!

You know it’s a good dish when you take it to a picnic and you bring home an empty bowl 🙂 Give this a try. You can’t really go wrong here…. avocado, tomato, corn. Like 3 of my top fave foods!

Avocado, Corn & Tomato Salad


  • 1 bag (16 oz) frozen corn, thawed
  • 2 avocados, chunked
  • 1 pint cherry or grape tomatoes, halved
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped cilantro
  • dressing
  • 2 tablespoons olive oil
  • zest of 1 lime
  • 1 tablespoon fresh lime juice (about 1/2 a lime)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper


  1. Combine thawed corn, chopped avocados, tomatoes, red onion, and cilantro into a mixing bowl. Stir together.
  2. In smaller bowl, combine all the dressing ingredients together and stir together with a fork. Pour over the salad and stir gently to combine.
  3. Put the salad in the fridge to chill for 2-3 hours or eat right away. Serve with tortilla chips.


This is best served after its been chilled in the fridge for 2-3 hours. But, it is still delicious if eaten right away

I like to use the gold n' white corn for this recipe

    This looks so fresh and nutritious. I love corn, tomatoes and of course avocados but I have never had them together and this salsa will be a perfect way for me to “get my feet wet”, so to speak. I could eat the entire bowl of it myself with crispy corn chips or even as a side. Thanks for a great recipe.
