Homemade Pretzel Bites with Store-Bought Pizza Dough

I can never pass up those pretzel shops when we’re out shopping! The warm, soft pretzel bites with that buttery salty topping is just too good to say no to. Warm carbs are quite possibly a very real love language😍

Make pretzel bites at home in your own kitchen with this easy recipe that uses store-bough fresh pizza dough. The secret to a great, golden brown, chewy & soft pretzel is that quick trip they take in the boiling baking soda water. It is magic!

If you prefer, use your favorite homemade pizza dough recipe or use frozen bread dough (1 pound loaf). Make sure that if the pizza dough is frozen, that you let it thaw completely before making these amazing pretzel dough bites.

Ingredients Needed

  1. Store-Bought Pizza Dough : You need 16 ounces, which is 1 pound, of fresh pizza dough. Most grocery stores have this available for purchase. It’s a pre-made pizza dough that’s ready to use immediately. If it comes frozen, you will need to make sure it’s thawed completely before using. Feel free to also use your favorite homemade pizza dough as well. 
  2. Water 
  3. Baking Soda : This is what creates that pretzel flavor in the boiling water and that deep golden color. 
  4. Large Egg : The egg wash (egg + water) provides the shine and helps the color develop in the oven. 
  5. Butter
  6. Kosher Salt : The perfect finishing touch! Any coarse salt will work such as kosher salt, flaky sea salt, or use your favorite salt.

How To Make Pizza Dough Pretzel Bites

Preheat the oven to 425 degrees F. Line a large baking sheet/cookie sheet with parchment paper. Set aside. 

Divide the pizza dough ball into 4 equal pieces. Roll each piece into a long rope about 1-inch thick. Cut into 1 1/2-inch bite-sized pieces and place them on the parchment-lined baking sheet. Continue with the remaining dough pieces. 

Let the pizza dough bites rest, at room temperature, on the baking sheet for 15 minutes.

In a large pot, bring the 8 cups of water to a boil over medium-high heat. Once boiling, slowly and carefully stir in the baking soda until dissolved. 

Drop a few dough pieces into the boiling water and cook for 30 seconds. Use a slotted spoon to life them out and place them back onto the parchment paper on the baking sheet. Repeat with the remaining dough pieces.

Whisk together the egg and water in a small bowl. Brush each dough piece lightly with some egg wash. 

Bake for 13-17 minutes, or until the pretzel bites turn golden brown.

Remove the pretzel bites from the oven and immediately brush pretzel bites with the melted butter and sprinkle kosher salt over top the butter. 

Cool slightly, then serve the pizza dough pretzels bites warm with your favorite dipping sauce. Enjoy!

How To Store Easy Pretzel Bites

  • Room Temperature : Keep cooled pretzel bites in an airtight container, or Ziploc bag, for up to 1 day (24 hours). Reheat in the oven at 350 degrees F for 5 minutes, or warm up a few pretzel bites in the microwave until heated through. You could also eat the bites at room temperature but they won’t be as soft. 
  • Refrigerator : Store the pretzel bites for up to 3 days in a sealed container or Ziploc bag. Warm before serving.
  • Freezer : Freeze baked pretzel bites for up to 2 months in a freezer-safe container or bag. Reheat from frozen in a 350 degrees F oven for 8-10 minutes. 
  • Make-Ahead Instructions : Boil the dough pieces up to 4 hours before baking. Store them covered in the fridge and brush with the egg wash right before baking. I would recommend using a baking sheet with a lid for easy storage before baking.

Serving Suggestions

The best way to serve these soft pretzel bites is with your favorite dipping sauce(s). I love to serve the pretzel bites + dips charcuterie board style with a few different dipping options for everyone. 

  • Cream Cheese Dip : Try a cream cheese dip if making cinnamon sugar pretzel bites.
  • Mustard Dip : Honey mustard dip, spicy mustard, yellow mustard, etc. 
  • Ranch

Tips From The Kitchen

  • Allowing the cut dough bites to rest at room temperature for 15 minutes before boiling helps them puff slightly and relaxes the gluten for a smoother, rounder shake without becoming bready or over proofed. 
  • Rolling the dough into long ropes before cutting, gives the pretzel bites their traditional puffed, round shape – the iconic pretzel shape for bites.
  • Make sure you are using a large pot for the boiling water and baking soda! Slowly add the baking soda in, while stirring, because it will bubble up very quickly, and adding it too fast can cause the water to foam over the sides of the pot. Stir gently unfiltered fully dissolved before adding the dough bites. 
  • Boiling the dough bites in a baking soda bath gives these bites their classic pretzel flavor and chewy crust. Don’t skip this important step! You can’t have pretzels without it. 
  • Keep batches small when boiling the dough bites to maintain consistent water temperature and baking soda concentration. 
  • These are best served warm, soon after baking, but can easily be reheated if needed. 
  • Try adding everything bagel seasoning or grated parmesan cheese (the cheap, shelf-stable stuff) over the dough bites before baking for a flavor twist. 
  • Instead of sprinkling kosher salt over top the butter, try using cinnamon and sugar to create sweeter cinnamon sugar pretzel bites.
