I have never really been a huge fan of donuts. My kids on the other hand love them! My older 2 kids have gone to the same preschool and every single morning we drive right by a Dunkin Donuts. Without fail, they have both asked every single day “mom can we stop and get a donut?!”.

It brings back good memories every time we drive by. Our 3rd will start preschool at the same place in the Fall so I am sure the donut begging will happen with her too πŸ™‚

I will say that I do love baked donuts. Maybe I like them cause they seem a bit healthier cause they are baked. Now that I think about it, healthier and donut really don’t even belong in the same sentence. So just to clarify I do not think nor would I suggest that these are healthy but they are better than a fried donut!

And besides, they have banana + peanut butter + chocolate…… I mean is there a better trio of flavors?! I think not.

You will need a donut pan for these. They are rather inexpensive and totally fun to use. I also have these baked funfetti donuts on the blog so be sure and make those with your donut pan too!

Ingredients

    banana bread donuts
  • 2 bananas, peeled and mashed
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons vegetable oil
  • 3/4Β cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 tsp salt
  • chocolate peanut butter glaze
  • 3/4 cup powdered sugar
  • 1 1/2 teaspoons light corn syrup
  • 1/2 teaspoon vanilla
  • 1 tablespoon water
  • 3 tablespoons cocoa powder
  • 1/4 cup peanut butter

Instructions

  • Preheat the oven to 350ΒΊF. Prepare a donut pan by spraying with cooking spray.
  • In a mixing bowl, combine bananas, sugar, egg, vanilla, and vegetable oil. Mix together.
  • In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Add the dry ingredients into the wet mixture and mix until batter forms and combined.
  • Transfer the batter to a gallon size Ziploc bag. Snip the corner and pipe the batter into the donut pan. Fill each donut to be about 3/4 full.
  • Bake for 8-10 minutes and let cool for about 20 minutes before removing from the pan and glazing.
  • TO MAKE THE GLAZE : Combine powder sugar, corn syrup, vanilla, water, and cocoa powder in a small bowl. Stir until combined. Put peanut butter in a microwave-safe bowl and microwave for about 30 seconds or until peanut butter is melted and soft.
  • Dunk donuts (just the top) into the chocolate glaze and then place on cooling rack. Repeat with remaining donuts. Using a fork, drizzle the melted/soft peanut butter over the donuts.
  • Eat right away or let sit for about an hour for the glaze to harden.

      February 11, 2018 at 10:32 pm Oh yes, for sure that would work. I am guessing they would need a longer cook time so start with the time the recipe calls for and check it every minute or so after that. Enjoy!
