Ingredients Needed

  • Rice Chex Cereal – Other kinds of Chex cereal can be used but the rice Chex has a more mild and general flavor to it that pairs well with anything, even sweet stuff like in this recipe.
  • Bugles – This favorite childhood treat is always a favorite in this snack mix.
  • Kettle Popcorn
  • Powdered Sugar – This is what coats the white chocolate covered snack mix.
  • White Chocolate Chips – Use a good-quality brand of white chocolate chips like Ghirardelli or Guittard. The other store brands and even Nestle brand white chocolate chips taste more like vanilla melting wafers. We want the good stuff for this recipe!
  • Chow Mien Noodles – These are super crispy and found in the Asian aisle at the grocery store.
  • Mini Marshmallows
  • Peanut Christmas M&M’s
  • Christmas Sprinkles

Recipe Tips

Here are a few of my helpful tips so that you can have success recreating this buddy the elf snack mix recipe in your own kitchen ♥

  • Pro Tip : When you are spreading the white chocolate Chex mix onto the cookie sheet, spray a rubber silicone spatula with cooking spray to help spread it and to prevent it from sticking to the spatula. You can also use wax paper as a barrier between your hands and the snack mix when you’re spreading it out.
  • Serving Tip : Add additional sprinkles and candies to the top of the snack mix after you have put in the serving bowl. As you mix up the snack mix in the bowl the candies and sprinkles will fall to the bottom. So be sure and add some more on top for a pretty presentation.
  • Large Bowl : Make sure you are using a large bowl to mix up this snack mix. You will need to mix it well so make sure the bowl is large enough to accommodate the ingredients and all the mixing.

Christmas is not complete without watching the movie Elf with this Buddy The Elf Christmas Snack Mix! Rice Chex, bugles, kettle corn, crispy chow mien noodles, marshmallows, sprinkles, and peanut m&m's make up this addicting white chocolate covered snack mix that you just can't stop eating. Just like the famous movie this Christmas snack mix is sure to be a hit with your family and friends!

Ingredients

  • 3 cups Rice Chex cereal
  • 1 cup Bugles
  • 1 cup kettle popcorn
  • 1 bag (11 oz) white chocolate chips
  • 1/2 cup powdered sugar
  • 1 cup chow mein noodles
  • 1 cup mini marshmallows
  • 1 cup Christmas mix peanut M&M's
  • 1-2 tablespoons Christmas sprinkles

Instructions

  • Stir together the rice Chex, Bugles, and kettle corn inside a mixing bowl until combined.
  • Add the white chocolate chips to a microwave-safe bowl (I use a glass measuring cup) and melt in 30 second increments stirring it well after each round.
    * Once it's melted and mixed together smoothly, it's ready. Don't cook for too long or else the chocolate could seize or scorch.
    * It should only take 1-2 minutes to melt the white chocolate properly.
  • Pour the white chocolate over the Chex mix inside the bowl and stir to coat everything in the melted chocolate.
  • Spread the mixture out onto a cookie sheet that has been lined with wax paper or parchment paper. Use a rubber spatula (that has been sprayed with cooking spray) to spread it out evenly.
Allow it to set and dry at room temperature for 1 hour OR you can refrigerate it for 30 minutes.
  • Break it apart and add it into a large mixing bowl. Add the powdered sugar and stir until everything is coated in it.
  • Add in the chow mien noodles, mini marshmallows, peanut m&m's, and sprinkles. Gently stir to combine.
  • Serve this snack mix inside a bowl, or individual treat bags, and enjoy!
    * The sprinkles and candy will fall to the bottom so I like to add some additional sprinkles and m&m's on top of the snack mix for a pretty presentation before serving.
