Oatmeal Cranberry Cookies With White Chocolate Chips

Each bite of these oatmeal cranberry cookies delivers a delightful mix of chewy oats, sweet cranberries, and creamy white chocolate chips. The best part is that you only need one bowl and a few ingredients to make them!

This cookie recipe starts with a bag of oatmeal cookie mix and few additional add-ins to create a quick & easy treat in no time at all.

Simple Ingredients Needed To Make Semi-Homemade Oatmeal Cranberry Cookies

  1. Oatmeal Cookie Mix – This is the bag of dry ingredients for oatmeal cookies that can be found in the baking aisle alongside the muffin mixes and cake mixes. The directions on the bag will be very different than what’s below so don’t follow them!
  2. Old-Fashioned Whole Oats
  3. Melted Salted Butter
  4. Large Egg
  5. Whole Milk – The higher fat the better. I always use whole milk when a baking recipe calls for milk.
  6. Vanilla Extract
  7. Dried Cranberries – Use regular dried cranberries or reduced-sugar dried cranberries.
  8. White Chocolate Chips – I recommend using a good quality brand of white chocolate chips. I love the Guittard brand or Ghiradelli brand.

How To Make It (Full Recipe Card Below)

Preheat the oven to 350 degrees F. Lightly spray a cookie sheet with non-stick cooking spray or line with parchment paper. Set aside.

In a large bowl, whisk together the dry contents from the oatmeal cookie mix along with the whole old-fashioned oats until combined.

Add in the melted butter, egg, milk, and vanilla extract. Stir with a rubber spatula until combined well.

Stir in the dried cranberries and white chocolate chips until incorporated.

Use a medium cookie scoop, about 1.5 tablespoons, to scoop out the cookies and place 12 per cookie sheet. Flatten each cookie slightly with the palm of your hand or bottom of a clean glass cup. They should look like a thick disc shape rather than balls.

Cook for 9-12 minutes or until the edges are light browned and the cookies are set.

Let the cookies cool on the warm cookie sheet for about 5-10 minutes before removing them to a cooling rack to cool completely, or enjoy them warm! So yummy when warm.

To store leftovers, let the cookies cool completely to room temperate and then place them in an airtight container, or sealable bag, with parchment paper between layers. For short-term storage, up to 1 week, keep them at room temperature; for longer freshness, 2-3 weeks, refrigerate them.

To freeze, wrap each cookie individually with plastic wrap and then again in foil. Store them in the freezer for up to 3 months. Allow the cookie to thaw in the fridge or at room temperature before eating.

  • 1/3 cup whole old-fashioned oats
  • 1/2 cup (1 stick) salted butter melted
  • 1 large egg
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 3/4 cup white chocolate chips
