This Egg Salad Sandwich with Bacon is a lunch time favorite with creamy egg salad, green lettuce, and crispy bacon strips between toasted bread. Classic egg salad with celery, green onion, wrapped up in a creamy mayo based dressing is so simple to make with leftover hard boiled eggs.

Creamy Egg Salad Sandwich with Crispy Bacon
Classic egg salad is one of my favorite sandwiches ever! Add some crispy bacon and crisp green lettuce and you pretty much have the best egg salad sandwich ever. Mix up this simple egg salad mixture, top it with some crispy bacon, green lettuce, and sandwich it between two toasty slices of bread.
You’ll love the creamy salad paired with the crunchy and salty bacon. It’s also the perfect way to use up leftover hard boiled eggs from Easter, or make some hard boiled eggs just for this sandwich (totally worth it, promise!).
Ingredients Needed

Creamy Egg Salad
- Hard Boiled Eggs – Make sure that these are cold before using. An egg salad sandwich is much better with cold hard boiled eggs, and they cut easier too. You will need 6 large hard-boiled eggs for this recipe.
- Mayonnaise – For the best flavor and texture use the real stuff with all the fat! I highly recommend using Hellman’s brand or Best Foods brand for the best taste.
- Yellow Mustard
- Green Onion
- Celery
- Salt & Pepper – I like using kosher salt because it elevates flavors rather than make the food taste salty.

To Assemble the Sandwiches
- Sliced Bread – I prefer this toasted but you can also just use it as is. Any kind of bread will work great! Sourdough, wheat, whole grain, nut bread, gluten-free bread, French bread, artisan bread, etc. Whatever you want.
- Green Leaf Lettuce
- Crispy Cooked Bacon Strips – I love the convenience of microwave bacon because it gets really crispy in the microwave. You can also cook bacon with your preferred method (air fryer, oven, skillet pan).
- Sliced Tomato/Avocado – This is optional. Just an idea ☺️
How To Make Bacon Egg Salad Sandwiches

- Chop Hard Boiled Eggs : You can use a fancy egg slicer/chopper but I find it’s easiest to use a cutting board and knife. You’ll want to keep the eggs in larger chunks so there is some texture. It is an egg salad after all!
- Creamy Egg Salad : Add the chopped eggs, mayo, mustard, celery, green onion, salt and pepper into a mixing bowl. Gently mix together until combined. Taste and add more seasonings if needed.
- Sandwiches : Using two pieces of toasted bread, scoop some egg salad onto one half, top with a slice of crisp bacon (cut in half), and a leaf of green lettuce. Top it with the other sandwich half and cut it in half or cut diagonally.

Should I Refrigerate Egg Salad Before Eating?
- This is totally up to you! I prefer a cold egg salad so not only do I use cold, chilled hard boiled eggs but I also let the egg salad refrigerate for at least 2 hours before eating it. As long as the hard boiled eggs are cold, you can eat this salad right after making it with delicious results. It’s just up to you as to what temperature you want the egg salad at.
- I do highly recommend only using cold hard boiled eggs. Do not try to use lukewarm eggs that you just hard boiled and peeled. You want them chilled from the fridge.

How Long Does Egg Salad Last In The Fridge?
- Leftover egg salad can be stored in an airtight container, in the refrigerator, for up to 4-5 days.
- I love making the salad at the beginning of the week and eating some on toasted bread for lunch throughout the week. The flavors marinate more and more as it sits in the fridge.

What Toppings Can Go On Egg Salad Sandwich?
- Well this particular recipe involves crispy bacon strips and you really can’t go wrong with that! Other topping ideas include green leaf lettuce, thinly sliced tomatoes, or sliced avocado. Adding tomatoes would give this sandwich an egg salad BLT vibe, which sounds delicious.

- Toast The Bread : This sandwich tastes so much better when the bread is toasted. Try it! Of course, it can be eaten with the soft bread but I prefer the bread toasted.
- Use Cold Hard Boiled Eggs : Make sure that the hard boiled eggs you are using are cold. Don’t try to use just boiled hard-boiled eggs because they’re still a little warm. We want the eggs to be chilled from the fridge.
- Finely Diced Celery & Green Onion : Unless you like big crunchy chunks of onion and celery, I highly recommend finely dicing them into small pieces. I think it tastes better with the smaller pieces and it makes the egg chunks stand out.
- Make It Easy! : If you don’t want to hard boil eggs for this recipe, feel free to buy some hard boiled eggs from the grocery store and use them.
- Spice It Up : If you want some spice or more flavor, try adding some red cayenne pepper instead of black pepper OR add a pinch of paprika into the egg salad. You could also add some garlic powder or try adding a fresh crack of black pepper onto the egg salad after you put it on the bread. Fresh cracked black pepper is always a good idea for egg salad.
- Use Good Quality Bread : I highly recommend using a thick, good-quality bread that you love. Using a whole grain nut variety of bread is always delicious with egg salad. Or try buying some artisan bakery bread from the bakery section of the grocery store. Or use a gluten-free bread or thick white bread (not Texas toast thick, but rather just a quality bread).

Ingredients
Egg Salad
- 6 large hard boiled eggs (chilled)
- 1/4 cup mayonnaise
- 1/4 cup finely diced celery (about 1 small celery rib)
- 2 tablespoons thinly sliced green onions
- 1½ teaspoons yellow mustard
- ⅛ teaspoon kosher salt
- ⅛ teaspoon black pepper
To Assemble
- 8 slices bread (toasted if wanted)
- 4 strips cooked crispy bacon (or more to taste)
- green leaf lettuce (optional)
Instructions
- Using a cutting board and knife, chop up the hard boiled eggs into larger chunks. * Make sure you are using chilled hard boiled eggs before making this egg salad.
- Add the chopped eggs, mayonnaise, celery, green onion, yellow mustard, salt, and pepper into a mixing bowl. Use a wooden spoon or spatula to gently mix the salad together until combined.* Taste and add more seasonings if wanted.
- You can either refrigerate the egg salad for 1-2 hours before serving OR serve it right away. Place a scoop of egg salad onto a piece of toasted bread. Top with a slice of bacon that has been cut in half, top with a piece of green lettuce, and then place another slice of toasted bread on top. Cut in half or cut diagonally. Enjoy!* I prefer this egg salad after it has refrigerated for about 2 hours. But as long as you are using chilled hard boiled eggs, then it's yummy and perfectly fine to eat it right away.
