Four ingredients are all you need for these super easy, quick to make, and delicious peanut butter s’mores cookie bars! Get the kids involved and make this fun dessert in a matter of minutes. Tastes just like a toasty s’mores with peanut butter and chocolate candies.
Today my sweet little Madison turns 3! Out of all 4 of our kids she has the BIGGEST sweet tooth. And I mean BIG. She can often be found digging around the pantry for a treat, or pouring herself a bowl of “cereal” (aka- chocolate chips or sprinkles).
One of my very favorite memories of her is when I was pregnant with our 4th baby and I was so ridiculously tired that pregnancy that I would often sleep in…. late.
Well, one morning I got up and found her sitting on the kitchen floor with chocolate smeared all over her face and wrappers everywhere. She had eaten the entire 6 pack of Hershey chocolate bars. All of them!
Don’t worry, I do take all my kids to the dentist every 6 months so I assure you her teeth are fine 🙂
She also loves to help me bake in the kitchen. Every Sunday we make a treat and we made these peanut butter s’mores cookie bars to celebrate her birthday for our Sunday treat. My kids basically made these themselves. That’s how easy they are!
The cookie base is just store-bought refrigerated peanut butter cookie dough. Yes, you can make your own and use that BUT the whole point of this recipe is that it’s quick and easy enough for the kids to make. Hence the reason why the store bought cookie dough.
I’m all about baking from scratch but sometimes you just need those quick treats in your recipe arsenal. This one is perfect for that.
To make the cookie dough easier to spread, cut it into slices and then lay out the slices in the baking dish. Press with your fingers to form the cookie base. Cook that and then layer the marshmallows on top and bake & then broil for that toasty brown marshmallow. Top with m&m’s and a drizzle of chocolate.
You’ll want to let these cool for at least 45 minutes to an hour. The chocolate will be soft set but the bars will be so much easier to cut. If you let cool for several hours the chocolate will set up and not be soft like before. We loved them both ways so you really can’t go wrong.
Be sure and make these before summer ends! Get the kids in the kitchen and make these delicious peanut butter s’mores cookie bars. You can also experiment with different variations too. Sugar cookie crust, chocolate chip cookie, top with peanut butter m&m’s or peanut, use Reese’s pieces, drizzle with butterscotch chips. The options are seriously endless. Have fun with it!

- 1 roll (16.5 oz) peanut butter cookie dough
- 3 cups miniature marshmallows
- 1 cup m&m's (I use mini sized)
- 1/2 cup milk chocolate chips
- 1 teaspoon oil (like canola or vegetable oil)
Heat oven to 350 degrees and spray a 9x13 baking dish with cooking spray.
Cut the peanut butter cookie dough roll into slices and then lay slices on the bottom of the baking dish. Using your fingers, smoosh together the dough and spread out evenly in the pan. You may need to spray your fingers with cooking spray or dip your fingers in flour.
Cook for 14-16 or until cooked and lightly browned.
Immediately spread the marshmallows on top of the cookie dough and bake for 3 minutes, or until puffy and soft.
Turn oven to high broil and broil the pan for about 1 minute to get the marshmallows toasty brown.
Sprinkle m&m's over the marshmallows.
In small microwaveable bowl, heat chocolate chips and oil until melted and smooth, in 30 second increments stirring after each. Using a table knife or fork, drizzle the chocolate over the bars.
Let cool for 1 hour and cut into squares.
