I have a top 10 of favorite recipes. These are recipes that despite making several new dishes a week (life of a food blogger) I make these favorites at least once a month. I’ve already posted a few of them on the blog and when I realized I had not posted this Crock Pot Santa Fe Chili I knew that I had to get it on the blog for you all. It’s sweet, slightly spicy (not a hot spice, just flavor), loaded with all the good stuff and it’s complete heaven in a bowl when you top it with sour cream, cheese, and Fritos. The Fritos chips are the most important part of this chili. Don’t leave them off!

When our oldest (he’s 7 now) was just a baby I have very vivid memories of him and I sitting in our tiny living room of our tiny apartment, back while my husband and I were still in college, and he would be laying on a blanket playing and I would be flipping through Taste of Home cookbooks and magazines. I came upon this recipe and knew I just had to make it. 7 years later with a few tweaks to the original recipe, it is still one of my all-time favorite dinners.
It is the ultimate comfort food for a cold day. I make this all the time come Fall and Winter time. Trust me when I say that this chili is just not the same without those toppings. The Fritos, cheese, and sour cream are must haves!
It takes just a few minutes to brown some ground beef and chopped onion. Dump it in the crock pot along with some canned ingredients and that’s it. Let it cook all day and come home to a warm, tender, and flavorful bowl of chili. Please don’t leave off the toppings. I always serve this with sour cream, shredded cheese, and Fritos chips (they are a must with this chili!). You could also add some jalapenos for spice, chopped avocados, etc.
In my family it’s my husband and I plus our 4 young kids (age 7, 5, 2, 2 months) so I try to keep things on the low end of the spice level around here. This chili recipe as written is not spicy. If you prefer more spice then use a can of hot diced tomatoes with chilies or add some cayenne pepper, or a can of diced green chilies, etc.

- 1 lb lean ground beef
- 1 onion, finely chopped
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1 can kidney beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 2 cans (15 oz each) white corn
- 1 can (14.5 oz) petite diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1 1/2 cups V8 juice
- 1 packet ranch seasoning mix
- 1 packet taco seasoning
- In a large skillet, cook beef, onion, brown sugar, and salt over medium-high heat until meat is no longer pink; drain. Transfer to a large 6-qt. slow cooker.
- Add in the remaining ingredients, mix until combined.
- Cover and cook on high for 4-6 hours or on low for 6-8 hours.
- Serve with sour cream, shredded cheese and corn chips if desired
I use a Vidalia sweet onion when I make this. Use whatever onion you prefer.
I love using 2 cans of corn but if you want less then only add 1 can.
I always use the mild taco seasoning. You could also use regular taco seasoning or a packet of hot taco seasoning.
I don't like the texture of green chilies whole in my chili. I dump the can of diced tomatoes w/ chilies in the blender and blend until combined and smooth.
The cans of beans are the standard size 15 oz can.
You don't have to use the brown sugar but ground beef + brown sugar is my secret ingredient to make ground meats taste amazing. Try it!
