Pineapple Chicken Salad Sandwiches

I love chicken salad. I have tried so many different recipes, but this is the recipe that I have made over and over again. It is our favorite! I found this recipe over at Six Sisters Stuff, they have tons of easy & family friendly recipes. I changed up a few things, and added a couple of must have chicken salad ingredients [well, ‘must haves’ according to me ๐Ÿ™‚ ].

Pineapple Chicken Salad

If your house is anything like mine, everyone is in a sugar induced coma from all the Easter festivities; egg hunts, Easter baskets, dessert….. This chicken salad is the perfect fix. I was intrigued with the cream cheese and crushed pineapple in this recipe, but after trying it, I now cannot have chicken salad any other way. The pineapple & grapes adds a bit of sweetness, the celery and almonds add a nice crunchy texture, and the cream cheese gives such a creaminess to the salad. Serve these with croissants (it’s a must!) and you have an easy dinner. I usually make these in the morning, let it sit in the fridge all day, and then when it’s time for dinner just pull it out and serve up some sandwiches.

Pineapple Chicken Salad

These sandwiches are also great for picnics at the park, or on those nights that you need to eat a quick dinner before sports practices or other activities. I like to serve these with chips. Try them out, they are so delicious & have the perfect mix of ingredients.

Pineapple Chicken Salad Sandwiches

Serving Size: 12 chicken salad croissant sandwiches

Ingredients

  • 1 (8 ounces) package cream cheese
  • 1 cup mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper
  • 4 chicken breasts, or 1 whole rotisserie chicken, shredded [about 4 cups]
  • 1 cup celery, finely chopped
  • 1 1/2 cups red grapes, sliced lengthwise in half
  • 1 cup sliced or slivered almonds
  • 1 bunch green onions, chopped
  • 1 (20 oz) crushed pineapple, drained well
  • croissants or rolls

Instructions

  1. Put cream cheese in a small bowl and microwave for 15-20 seconds to get soft. Add in mayo, Worcestershire sauce, garlic powder, salt, and pepper. Mix.
  2. In large bowl, stir together the shredded chicken, celery, red grapes, almonds, green onions, and crushed pineapple. Pour dressing mix over and combine.
  3. Store in the fridge for at least 3 hours, the longer the better. Serve on croissants or rolls.

Notes

** I prefer the olive oil mayo in these

** I always use a rotisserie chicken from Costco. It's perfectly flavored and makes these even easier. If you use chicken breasts, be sure to cook them with chicken broth and salt & pepper, to add some flavor.

      I hope you love these Marilyn! I actually just made up a batch for busy nights when my son has baseball games this week. We love them served on croissant rolls, but they’d be delicious on pretty much anything. Let me know how it turns out ๐Ÿ™‚
