  1. Plain Greek Yogurt : I love the Greek Gods plain greek yogurt – any plain greek yogurt works fine, just make sure you love the flavor and texture of it.
  2. Mayonnaise
  3. Curry Powder
  4. Kosher Salt & Black Pepper
  5. Cooked Shredded Chicken : Grab a store-bought rotisserie chicken and make prep really easy!
  6. Celery Stalks : Very finely chopped, or if you prefer larger pieces, then leave then in larger chunks when chopping. 
  7. Green Bell Pepper
  8. Onion : I prefer a sweet onion or green onions, but another option for a mild onion flavor is yellow onion or red onion; or white onion if you prefer a stronger, zesty onion flavor.

Whisk together the plain greek yogurt, mayonnaise, curry powder, salt, and pepper in a large mixing bowl until smooth.

Stir in the shredded chicken, celery, green bell pepper, and finely diced onion until everything is combined well and coated. 

Cover and refrigerate for at least 4 hours before serving. Enjoy on croissants, sandwiches, lettuce wrap, on a bed of greens, or dip crackers or crunchy fresh veggies.

Curried chicken salad should be stored covered, in an airtight container, in the refrigerator for up to 3 to 4 days. Serve the chicken salad chilled from the fridge.

  • If you want to add or switch out ingredients – try these options that would complement the curry chicken salad really nicely. Crunchy cashews, sweet raisins like golden raisins are a perfect pairing with curry.  
  • I recommend using a plain greek yogurt that you LOVE. The flavor really shines through in this recipe. I love the Greek Gods brand because it’s so smooth, creamy, and has a very mild taste to it. 
  • I don’t recommend using all plain greek yogurt instead of the yogurt + mayonnaise combo. You need that little bit of mayonnaise to provide richness and creaminess to the dressing. 
  • You can use a sweet onion, thinly sliced green onions, or yellow onion for a more mild onion flavor. Or use a red onion or white onion for a more zesty bright onion flavor. 
  • I prefer using a yellow curry powder because it’s savory and slightly sweet, which pairs well in this easy chicken salad recipe. There are other options of curry powder so make sure you are using your favorite; as some curry powder is much more intense or spicy in flavor. I recommend using the basic yellow curry powder you can find with the dried seasonings at the grocery store. 
  • Instead of a green bell pepper, other options are yellow bell pepper, orange, or red bell pepper all work great.

This is a great dish to make the night before. As it already needs chill time before serving, making it the night before will give the flavors even more time to marry together and to intensify. 

How Could I Make This Vegetarian?

If you would like to make it vegetarian, replace the shredded chicken with the equivalent amount of rinsed and drained chickpeas, or canned shredded jackfruit that has been drained well. 

Is There A Way To Make The Dressing Dairy-Free?

If you need a dairy-free option, you can replace the plain Greek yogurt with mayonnaise and add 1 tablespoon lime juice or lemon juice. Taste the sauce and add more lime as needed to make it tangy similar to greek yogurt. Another option is to use Miracle Whip, as it is known to be more tangier than regular mayonnaise. Both Miracle Whip and mayonnaise are naturally dairy-free, or use a dairy-free alternative or vegan option to greek yogurt.

  • 1 cup plain greek yogurt
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow curry powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 cups cooked shredded chicken
  • 3 celery stalks finely diced
  • 1 green bell pepper finely diced
  • 1/4 cup finely diced sweet onion (about 1/2 a small onion)
