Cheesy French Onion Chicken Casserole (With French Onion Dip)
French onion chicken casserole is a creamy chicken casserole, and a super easy dinner recipe where everything is mixed up in one bowl and then bakes in a casserole dish until golden brown and melty.
The casserole starts with store-bought, convenient ingredients like frozen hash browns, cooked chicken, a container of French onion dip, and delicious French fried onions to really maximize the onion flavor and give the casserole tons of creamy and crispy texture.

Simple Ingredients Needed
- Frozen Southern Hash browns : These are the shredded hash browns that you can find in the freezer section, or you can buy them refrigerated and already thawed near the eggs and butter at the grocery store.
- Cooked Shredded Chicken : This is a great recipe to use a store-bought rotisserie chicken in. You can also put chicken breasts + a can of chicken broth into the slow cooker and cook on low for 6-7 hours, you’ll end up with perfectly tender and shredded chicken. Use up leftover chicken or buy some ready-to-use shredded chicken from the grocery store.
- French Onion Dip : This is the ‘chip dip’ that you can find near the sour cream and other cold dips.
- Cream of Chicken Soup
- Shredded Monterey Jack Cheese : For best results, I always recommend buying a block of cheese and shredding it yourself.
- Garlic Powder
- Onion Powder
- Kosher Salt & Black Pepper
- Crispy Fried Onions : These are the crunchy onion toppers (typically used for like a green bean casserole or something). I like to crush mine even finer, but if you like the larger chunks then leave them as is.
How To Make French Onion Chicken Bake (Printable Recipe Card)
Preheat the oven to 350 degrees F. Spray a 9×13 baking dish or casserole dish with nonstick cooking spray. Set aside.
In a large bowl, combine the thawed hash browns, shredded chicken, French onion dip, can of cream of chicken soup, shredded cheese, garlic powder, onion powder, salt & pepper. Stir until it’s combined well.
Transfer the chicken mixture into the casserole dish and spread it out evenly.
Sprinkle the crispy fried onions over top.
Cover the pan with aluminum foil and bake for 40 minutes. Uncover, and bake an additional 10 minutes.
Serve warm and enjoy!
How To Store Leftovers
- Refrigerator : Any leftover casserole should be stored in an airtight container, in the refrigerator, for up to 3-4 days
- To Freeze : Make the casserole up to the part of putting on crispy fried onions (leave those off for freezing). Cover the pan tightly with plastic wrap and then cover again in a layer of aluminum foil. Freeze for up to 3 months. Thaw in the fridge overnight and add the crispy onion topping just before baking it according to the recipe instructions. To freeze leftovers after it’s already baked, place leftovers inside a freezer-safe container, or cover the dish tightly with plastic wrap and then in foil. Freeze for up to 3 months. Thaw in the refrigerator overnight before heating it up.
- To Reheat : If you are reheating single servings, you can microwave for 30-60 seconds until heated through. If heating up a large portion of casserole, you can place it in the oven at 350 degrees F for 15-20 minutes. If you want the crispy onion topping to be crisp for serving, place it under the broiler for just a couple of minutes.
Can I Make Any Substitutions?
- Monterey Jack Cheese : This can be substituted with any cheese you prefer! Try using cheddar cheese, Colby jack, pepper jack, Swiss cheese, mozzarella cheese, provolone cheese, and you can even add some additional parmesan cheese if you want some of that salty cheesy flavor in the dish.
- Cream of Chicken Soup : You can use any cream of soup in this recipe. Try cream of onion, cream of mushroom soup, or even cream of celery.
- Southern Hash Browns : You can use the frozen ones (thawed) or use the Simply Potatoes brand, which are already thawed and refrigerated, in place of the frozen. The O’Brien potatoes can also be used, they are frozen cubed potatoes that also have bell peppers and onions mixed in.

Can I Use Rotisserie Chicken? What Is Best To Use?
Yes, using a rotisserie chicken is a great way to make this casserole with minimal prep. You can also put 2-3 chicken breasts into a crockpot along with a can of chicken broth; cook on low heat for 6-7 hours and then use two forks to shred it. The chicken is fall apart tender when cooked in the crockpot and this is usually how I prefer to cook chicken when a recipe calls for it, and you can even use frozen chicken breasts! You can also use canned shredded chicken but you want to watch the salt you add to the casserole because the canned chicken is saltier.
Can I Use Rice Instead of Hash Browns?
Yes, you can use cooked white rice in place of the shredded hash browns if wanted. You will need about 4 cups of cooked white rice, or any rice you prefer.
Can I Make The Casserole Ahead of Time?
Yes! Prepare the casserole, but leave off the crispy onion topping. Cover the dish with a lid, foil or plastic wrap and place it in the fridge for up to 24 hours. When ready to heat and serve for dinner, take the casserole out of the fridge about 30 minutes before baking so it can come closer to room temperature before placing it in the hot oven. Add the crispy onions right before baking according to the baking instructions.
