Easy Banana French Toast Recipe

Banana French toast tastes like your favorite Cinnamon Banana Bread Muffins! A sweet, soft custardy banana center and cooked in butter for that golden brown perfection on the outside. 

If you’re wanting a recipe to use up those brown ripe bananas, or maybe you just want a different French toast recipe, then this is the recipe for you! So simple to make and it’s bursting with sweet banana flavor.

French Toast Ingredients

  1. Thick, Sturdy Bread Slices : Brioche bread, thick French bread slices, or a thicker bread is the best option when making french toast. Grandma Sycamore brand bread is a good option if using regular bread. 
  2. Overripe Bananas : One large ripe banana, or two smaller bananas, is what you’ll need for the recipe. 
  3. Large Eggs
  4. Milk : A higher fat milk is best such as 2%, whole milk, or half and half. 
  5. Granulated Sugar
  6. Vanilla Extract
  7. Ground Cinnamon
  8. Ground Nutmeg
  9. Salt : I use kosher salt or sea salt. 
  10. Butter : This is for the skillet pan when cooking the french toast.
  11. Toppings For Serving : Sliced bananas, fresh berries, warm peanut butter drizzle, whipped cream, powdered sugar, syrup, chopped nuts. Lots of options!

How To Make Banana French Toast With Ripe Bananas (Printable Recipe Card)

In a shallow bowl, whisk together the mashed banana, eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth and combined. For the smoothest, and best results, you can also add everything into a blender and blend until smooth (I prefer doing this).

Heat the butter in a large skillet pan over medium heat.

Dip slices of bread into the banana egg mixture, making sure to coat both sides of the bread well. Place it into the skillet pan, and cook for 2-3 minutes per side, or until golden brown.

Transfer the cooked French toast to a plate and serve warm with maple syrup, warm peanut butter drizzle, banana slices, powdered sugar, whipped cream, and/or fresh berries.

How To Store Leftover French Toast

You can store leftover banana French toast slices in an airtight container, in the refrigerator, for up to 3 days. To reheat, pop slices in the toaster oven or warm them in a skillet pan with a pat of butter for the best texture. 

For longer storage, freeze individual slices wrapped in plastic wrap and then again in aluminum foil, and then place them inside a freezer-safe container or bag. Freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.

Serving Suggestions For Banana Bread French Toast

Here are some of the best ways to serve this easy breakfast! I love to out out different toppings and then everyone can add whatever they want to the top of French toast and make their own customized french toast slices for eating. 

  • Fresh Banana Slices
  • Warmed Peanut Butter : This is so good paired with the banana flavor. Drizzle the warmed peanut butter over top or spread peanut butter on the slices of French toast. You can use your favorite nut butter or sunflower butter. 
  • Warmed Nutella Drizzle
  • Fresh Berries : Strawberries, blueberries, raspberries, or blackberries all pair nicely with the banana and cinnamon. 
  • Fresh Fruit : Serve the French toast alongside some fresh fruit such as pineapple, kiwi, watermelon, cantaloupe, etc. 
  • Pure Maple Syrup or Pancake Syrup
  • Chopped Nuts : Chopped pecans, walnuts, or almonds.
  • Whipped Cream : Make your own whipped cream by beating 1.5 cups heavy whipping cream + 1/2 cup powdered sugar until stiff peaks form. Buy whipped cream in the spray can, or use thawed Cool Whip.

What Kind Of Bread Works Best For French Toast?

Thick slices of bread such as brioche, Texas toast, or challah bread works best because they soak up the batter without falling apart and getting soggy. Thin sandwich bread is not ideal, as it can become mushy and difficult to flip. For a heartier option you can even use slices of sourdough.

Another option is to go to a local bakery and buy some cinnamon bread, cut it into thick slices, and use that for this recipe. I normally stick with Texas toast because it’s easily found in the bread aisle. Brioche can be found in the bakery area of the grocery store. There is also a local bakery nearby that makes cinnamon burst bread which is so good with the banana flavor in this French toast. 

If you are using a sandwich bread make sure you are using a thicker and heartier loaf and not the really flimsy thin bread. I like the Grandma Sycamore brand bread or the Sara Lee Artesano bread, if you’re using classic sandwich bread.

  • 6 slices bread (brioche, texas toast, good quality sandwich bread)
  • 1 large overripe banana mashed well
  • 2 large eggs
  • 1/2 cup milk (I use whole or half & half)
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • teaspoon ground nutmeg
  • 4 tablespoons butter
  • maple syrup, banana slices, powdered sugar, warmed peanut butter optional toppings

Banana Tip : It’s best to use a really ripe, ugly brown banana for this recipe. If the banana is not super ripe, you may want to add 1 teaspoon additional sugar. Overripe bananas have better banana flavor and provide more sweetness. 
Bread : It’s best to use a thick, sturdy bread such as brioche or Texas toast. If using sandwich bread, pick a thicker studier one such as Grandma Sycamore brand, or the Safe Lee artisan bread. Nutrition information is for brioche bread which is higher in fat and calories, so nutrition information will vary depending on the bread used. 
Nutmeg : Just a very small amount helps to round out the flavors but it is optional. I would not go out and buy it for just 1/8 teaspoon. If you have it, and want that deeper flavor, then add it. It’s also ok to leave it out.
