Turkey Stroganoff Recipe (with Ground Turkey)

This turkey stroganoff is such a comforting family-pleasing meal! Easy to make with ground turkey in a creamy sauce that is perfectly flavors ( and easy to make) with cream of mushroom soup and sour cream.

Stroganoff is traditionally served over cooked egg noodles. The hearty creamy sauce is perfect for those tender spiral egg noodles. Garnish with fresh parsley for an added fresh flavor.

All you need is one skillet pan to make this ground turkey stroganoff! Cook up the egg noodles while it’s cooking, and everything will be ready in just under 30 minutes.

Ingredients Needed & Substitution Ideas

  • Ground Turkey – Although this is called ‘turkey stroganoff’ you can use ground beef or ground chicken in place of the turkey if wanted.
  • Shallots – These are little tiny onion looking things that taste like a mix between fresh onion and fresh garlic. If you can’t find them, or don’t want to use them, substitute with 1 small onion that has been finely diced + garlic cloves that have been mined or pressed.
  • Baby Bella Mushrooms – You can substitute white mushrooms or another variety of mushrooms you prefer.
  • Kosher Salt or Sea Salt
  • Black Pepper
  • Condensed Cream of Mushroom Soup with Roasted Garlic – This can easily be found by the other condensed cream of soups, I recommend using it. If you can’t find it, use regular condensed cream of mushroom soup.
  • Milk – Use 1%, 2%, or whole milk. Higher fat milks (half and half, heavy cream) are much thicker and can more easily separate and curdle when heated. And you may need to add extra of a higher fat milk to get the right consistency in the sauce.
  • Sour Cream – For a healthier spin on the dish, try using plain Greek yogurt or plain yogurt.
  • Egg Noodles – Use wide egg noodles, medium, or extra wide egg noodles.

How to Make Ground Turkey Stroganoff Skillet Dinner

  1. In a large skillet pan, over medium-high heat, cook and crumble the ground turkey and shallots until the meat is no longer pink. Drain any excess grease or liquid from the pan.
  2. Add in the mushrooms, salt, and pepper. Cook for another 2-3 minutes or until the mushrooms are softened.
  3. Stir in the cream of mushroom soup and milk, cook for 4-5 minutes or until it comes to a simmer.
  4. Remove the pan from the heat and stir in the sour cream until mixed well.
  5. Serve over hot cooked egg noodles or other noodles of choice. Garnish with chopped parsley if wanted.

Storing Leftovers

Allow leftovers to cool to room temperature before transferring it to an airtight container or food storage bag. Ensure the container or bag is tightly sealed to prevent any air exposure. Place it in the fridge where it can be stored for 3-4 days.

Leftovers can also be stored in the freezer if you wish to keep it for longer. I don’t recommend storing the egg noodles mixed into the turkey stroganoff. Store the egg noodles separately in the fridge, and then store the turkey stroganoff in a freezer-safe container for up to 2-3 months. Let it thaw in the fridge overnight before reheating for serving.

Can I Make Any Changes To This Recipe?

There are several ways you can change up this recipe. Here are some ideas to try.

  • Onions : Along with, or instead of, add a finely diced onion in with the ground turkey. Use a white or yellow onion.
  • Garlic : If you enjoy garlic, mince or press a few cloves of garlic and sauté them along with the ground turkey. You can also use chopped garlic from a jar or garlic paste.
  • Herbs and Spices : Consider adding fresh herbs or dried seasonings like thyme, rosemary, or paprika for depth of flavor.
  • Vegetables : Add small chopped bell peppers, peas, or sliced carrots in with the ground turkey while sautéing.
  • Worcestershire Sauce : A splash of Worcestershire sauce, in the cream sauce, can add complexity and depth of flavor to the overall flavor profile of the dish.
  • Dijon Mustard : For a tangy kick, stir in 1-2 teaspoons of dijon mustard along with the cream of mushroom soup and milk.
  • White Wine : If wanted, deglaze the skillet pan with a splash of white wine after sautéing the turkey and shallots. Scrape up the bits on the skillet pan. Allow it to reduce slightly before adding the other ingredients.

Turkey Stroganoff Recipe Tips

  • Serving Suggestions : Traditionally stroganoff is served over cooked egg noodles. Other great options are Cream Cheese Mashed Potatoes, cooked fettuccine noodles, spaghetti noodles, or any pasta shape you want.
  • Pasta Tip : Make sure to add some salt to the pot of boiling water before adding the pasta. Pasta needs salt to help flavor it. I add about 1-2 teaspoons kosher salt when I boil pasta of any kind. When the pasta is done cooking, drain it in a colander but do not rinse it.
  • Condensed Soup : The recipe calls for cream of mushroom soup with garlic & herbs, but any condensed creamed soup can be used in it’s place. Cream of chicken, cream of chicken, cream of onion, etc.

Ingredients
  

  • 1 pound ground turkey
  • 1 package (3 oz) shallots (finely diced)
  • 1 package (8 oz) baby bella mushrooms sliced
  • 1 teaspoon sea salt or kosher salt
  • ½ teaspoon ground black pepper
  • 2 cans (10 oz each) condensed cream of mushroom soup with roasted garlic
  • 1/2 cup milk (2% or whole milk)
  • 1 cup sour cream
  • 1 bag (16 oz) wide egg noodles
  • freshly chopped parsley (optional for serving)

Instructions

  • Cook Egg Noodles : Bring a large pot of water to a boil over high heat. Cook the egg noodles according to package directions to al dente (or softer if you prefer). When done, drain the noodles in a colander but do not rinse them.
    * Add 1-2 teaspoon of salt to the boiling water to help flavor the egg noodles (if wanted).
    * I start the water boiling first, and then by the time it's boiling I add the noodles and it should be done when the stroganoff is done. .
    1 bag (16 oz) wide egg noodles
  • In a large skillet pan, over medium-high heat, cool and crumble the ground turkey and diced shallots until the turkey is no longer pink, about 5-7 minutes. If needed, drain the excess grease or moisture out of the pan.
    1 pound ground turkey, 1 package (3 oz) shallots
  • Stir in the sliced mushrooms, salt, and pepper and cook for another 2-3 minutes or until the mushrooms are softened and have released some juices.
    1 package (8 oz) baby bella mushrooms, 1 teaspoon sea salt or kosher salt, ½ teaspoon ground black pepper
  • Stir in the cream of mushroom soup and milk. Cook for 4-5 minutes or until it comes to a gentle simmer.
    2 cans (10 oz each) condensed cream of mushroom soup with roasted garlic, 1/2 cup milk
  • Remove the pan from the heat and stir in the sour cream until well combined and creamy.

  • Serve the turkey stroganoff over cooked egg noodles and garnish with chopped fresh parsley.

Notes

Ground Turkey : I use 7% fat lean ground turkey. Another good option is the 15% fat ground turkey. I don’t really recommend using the super lean 4% ground turkey, but it would work if that’s what you prefer. 
Shallots : You will find these in small 3 ounce sized bags in the produce area. They come with about 2 shallots in them. Peel the skin off (like an onion) and then dice small. If you can’t find them you can use a small diced onion + 2 garlic cloves instead. 
Nutrition Information : This is for 8 servings, which is plenty when you serve the stroganoff over the egg noodles. It includes one serving of the stroganoff + 1 serving of the egg noodles.
