Hello! Welcome back to the menu plan for the week. We had such a busy and exciting Sunday at my house. My daughter’s cat gave birth to 4 kittens yesterday – we did not even realize she was pregnant so it was a surprise to say the least! But I have to admit they are adorable and my kids are pretty much obsessed with the tiny little things.
Not sure if we’re keeping them all – but we will deal with that at 12 weeks after the babies are little older and can leave their mom – my girls have a few neighborhood friends who have talked about wanting a cat so there are some options. As if life was not expensive enough right now, I now have to spend a small fortune on kitty food for 4 babies! hahaha 😂
Onto the food! I’ve got some good ones this week and I hope your family loves them too.
MONDAY
CROCKPOT GARLIC PARMESAN CHICKEN PASTA
An easy 6 ingredient dinner is just what a Monday needs!
TUESDAY
One skillet pan is all it takes to get tender salmon with crispy skin! The best part is the lemon garlic butter sauce that gets poured over the salmon – and it’s made in the same pan.
WEDNESDAY
This is always my go-to meal! I always recommend getting some freshly sliced ham from the deli counter – it makes all the difference in these saucy and delicious sandwiches. Similar to a sloppy Joe!
THURSDAY
Another one pan wonder this week! Chunks of tender chicken simmer and cook in the same pan alongside a homemade teriyaki sauce. Serve over steamed white rice and garnish with green onions. So good!
FRIDAY
Another one of my family’s favorites. Made with canned chicken and trust me, you won’t even know – promise! I always make my Copycat Cafe Rio Dressing as a dipping sauce for the flautas.
SATURDAY

SUNDAY
DUMP & BAKE CHICKEN ALFREDO CASSEROLE
Yes, you dump the ingredients into the casserole dish and bake. You won’t believe how it all works out. Use a rotisserie chicken for easy prep.
DESSERT OF THE WEEK
So cakey, soft-baked, and full of chocolate! One bowl is all it takes and they always disappear fast.
