One Pot Teriyaki Beef and Rice (With Ground Beef)

Teriyaki Beef and Rice is a one pot skillet dinner recipe that’s ready in 30 minutes! Ground beef, broccoli, red pepper, and jasmine rice simmer in a simple teriyaki sauce and beef broth base with fresh garlic.

Teriyaki Ground Beef and Rice Skillet (One Pot Dinner Recipe)

I absolutely adore an easy dinner recipe, with hardly any dishes, and minimal ingredients that my whole family will devour. This one pot ground beef teriyaki and rice skillet just may be the best one of all. 

It’s such a good recipe to make when you need dinner in less than 30 minutes. While the ground beef cooks, I use those few minutes to chop up the bell pepper and broccoli. That way, when it’s done cooking, everything is ready to add into the same pot and simmer until it’s done cooking.

Simple Ingredients Needed

  1. Lean Ground Beef : I use 93/7 ground beef in this recipe. 
  2. Onion : A sweet onion or yellow onion works well, or use a white onion if you want more of that zippy onion flavor. 
  3. Kosher Salt
  4. Beef Broth : Full salt beef broth or reduced-sodium broth can be used; whichever you prefer. I like to use regular beef broth because there is not a lot of additional salt called for in the recipe. 
  5. Thick Teriyaki Sauce : I keep it simple and use a store bought teriyaki sauce/glaze, but you could use homemade teriyaki sauce if wanted. Make sure that you are using a thicker teriyaki sauce and not the teriyaki marinade (which is more like soy sauce consistency). 
  6. Jasmine Rice : It’s best to use rinse the rice in a fine mesh strainer and run it under cold water. This will get rid of any dust particles and it helps the rice taste better, and cook up fluffier.
  7. Red Bell Pepper
  8. Chopped Fresh Broccoli : Make sure the chopped broccoli pieces are in small, very bite-sized pieces so they will soften and become tender in the shorter cook time. 
  9. Garlic Cloves : Use fresh garlic cloves that have been minced or pressed, use chopped garlic from a jar, or you can use garlic paste.

How To Make One Pot Teriyaki Beef and Rice (Printable Recipe Card)

In a large skillet pan with a lid, add the ground beef, finely diced onion, and kosher salt. Cook and crumble, over medium-high heat, until the beef is no longer pink. Drain the excess grease from the skillet pan.

Add the chopped broccoli, chopped red bell pepper, beef broth, jasmine rice, thick teriyaki sauce, and garlic. Stir to combine everything together, and bring it to a boil. 

Once boiling, reduce the heat to medium-low and cover the skillet pan with a lid. Simmer for 20-25 minutes or until no liquid remains and the vegetables and rice are soft and tender. 

Garnish with sliced green onion, sesame seeds, and if wanted try a drizzle of spicy mayo over top! Enjoy.

How To Store Leftovers

Keep any leftovers stored inside an airtight container, in the refrigerator, for up to 3-4 days. Reheat single servings in the microwave until heated through. As with any leftover rice dishes, you may want to add a splash of water, or cover it with a damp paper towel (only if using the microwave), to help moisten the rice back up when reheating.

Serving Suggestions For Ground Beef Teriyaki With Rice

This one pot beef teriyaki and rice skillet recipe is great on it’s own! My family loves to add some garnishes on top of the rice dish; such as sliced green onions, sesame seeds, and a drizzle of some spicy mayo, or you can add additional teriyaki sauce over top. 

Another delicious way to serve this recipe is as a filling for lettuce wraps – I love eating it this way. The crunchy crispy lettuce pairs perfectly with the soft veggie and rice filling. Use bib lettuce, butter lettuce, iceberg lettuce, or green lettuce. 

Sides dishes that work well with this dinner recipe are edamame beans, egg rolls, or potstickers.

Recipe Tips

  • Use Ground Turkey : If wanted, swap the ground beef for ground turkey. Because ground turkey is so lean, I recommend adding some olive oil or even sesame oil into the skillet pan along with the ground turkey and onion. About 1 tablespoon is all that is needed. 
  • Teriyaki Sauce : There are different versions of teriyaki sauce at the store. For this recipe, you need to make sure that you are using a thicker teriyaki sauce (think bbq sauce or salad dressing type consistency). You don’t want to use a teriyaki marinade (similar to soy sauce consistency). Lawrys, Kikkoman, P.F. Changs, Soy Vay, Sweet Baby Rays, and Kinders all make a thicker teriyaki sauce or glaze/baste. 
  • Rinse The Rice : For the best taste, and fluffier rice, I recommend putting the measured Jasmine rice into a fine mesh strainer and running cold water over it. You will know it’s cleaned when the water runs clear below it. Tap the strainer against the sink several times to really make sure all the excess liquid is drained well from the rice.

  • 1 lb lean ground beef (I use 93/7)
  • 1 yellow or sweet onion finely diced
  • ¼ teaspoon kosher salt
  • cups chopped fresh broccoli
  • 1 red bell pepper chopped
  • cups beef broth
  • 1 cup Jasmine rice (uncooked)
  • 1 cup thick teriyaki sauce
  • 4 cloves garlic (minced or pressed, chopped from jar, or paste)

Instructions

  • In a large skillet pan with a lid, add the ground beef, finely diced onion, and kosher salt. Cook and crumble, over medium-high heat, until the beef is no longer pink. Drain the excess grease from the skillet pan.

  • Add the chopped broccoli, chopped red bell pepper, beef broth, jasmine rice, thick teriyaki sauce, and garlic. Stir to combine everything together and bring it to a boil.

  • Once boiling, reduce the heat to medium-low and cover the skillet pan with a lid. Simmer for 20-25 minutes or until no liquid remains and the vegetables and rice are soft and tender. 
    *If you know your stove top heats hot then you may want to reduce the heat to low during the simmer time to avoid burning the rice. I have a gas stove and low heat works best for me.
  • Garnish with sliced green onion, sesame seeds, and if wanted try a drizzle of spicy mayo over top! It can also be served as a filling for lettuce cups. Enjoy!

  • Salt : I use full salted beef broth or beef stock so I only ever end up using 1/4 teaspoon kosher salt; however, if you are using reduced-sodium or salt-free broth, you may need to add additional salt depending on preference. 
  • Beef Broth : Beef stock of beef bone broth are other options. Use the full salt broths or reduced-sodium; whichever you prefer or according to your dietary needs/restrictions.
