I mentioned yesterday that I have my top 5 dinners that I make at least once a month for my own family. I wanted to get all 5 of them on the blog to help you out. Well, 4 of them, because the other one is baked potatoes and I’m pretty sure no one needs a recipe for a baked potato 😉

I remember putting these Hot Chicken Hoagies on my ‘to-do’ board on Pinterest years ago. I never tried it because I was always so skeptical of the ingredients…… mayo ? (yuck!) and it seemed like it would have no flavor. Ummm, I was totally wrong! The first time I made this I was surprised by how delicious they were with so few and simple ingredients, and even better, it literally took me 5 minutes to make and then 15 minutes to bake in the oven!

I’ve made this more times than I can count, and finally I snapped a picture of it this last time (which happened to me on Saturday). If you wanted to substitute some greek yogurt for the mayo I think that would be just fine, and If you would rather not used the dried parsley you can go ahead and use 1/4 cup chopped fresh parsley. Experiment with different cheeses. I have used several kinds (usually whatever I have on hand); monterey jack, colby jack, cheddar, muenster (my fave), or even pepper jack if you want a kick!

I usually serve these alongside some chopped fruit and call it good 🙂

Those look yummy! So how do you get all the shredded chicken? Occasionally I fill my crockpot with frozen chicken and then shred it all and freeze, but I feel like I blow through it so fast. Thanks for sharing 🙂

Hey Alia! I usually just put some chicken breasts in the crock pot, with some chicken broth, during the day and then use it that night.
Sometimes I will fill the crock pot with chicken and then shred it and keep it in the fridge- that’s only if I know I will be using lots of shredded chicken that week.
