Slow Cooker Creamy Italian Chicken

Chicken gets cooked in the crock pot with a creamy Italian sauce, shred it and serve on top of noodles or rice. This is an easy and simple dinner that will for sure become a favorite!

This is another tried & true family dinner that I make All. The. Time! Every time I make this my son says the same thing to me

“Mom, you should make this every day!”

That is how I know something is really good and worth making over and over, is if he says so. He is my pickiest child so if I get his stamp of approval, then I know it’s good.

If his plate is not filled with sausage, bacon, and yogurt then most likely he won’t eat it willingly. Yesterday I was feeling a bit lazy and did not feel like cooking, so I asked him if he wanted a bacon cheeseburger from Wendy’s. He looked at me, his eyes got really big and he says

“Wait a minute mom, did you say Bacon!” Needless to say he ate it up real quick. 🙂

This Creamy Italian Chicken comes together in just a few minutes; put some chicken breasts in the slow cooker and then mix up your creamy sauce (well, actually you use a blender to get it all smooth) and pour over the chicken and let it do it’s thing.

We love this served over egg noodles. But you could use pasta or rice if you prefer.

Lite and/or lower fat products work fine in this for the salad dressing & cream cheese.

The higher fat content you use; milk, cream cheese, and salad dressing, the creamier and thicker the sauce will be.

Ingredients

  • 2 1/2 lbs boneless, skinless chicken breasts
  • 1 packet Italian seasoning dressing mix (dry mix- DO NOT prepare)
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 block (8 oz) cream cheese, diced
  • 1 bottle (8 oz) or 1 cup Italian salad dressing

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. In blender, blend remaining ingredients until smooth and creamy. Pour over the chicken.
  3. Cover and cook on low for 5-7 hours.
  4. Shred chicken and put back in the cream sauce. Serve over rice, pasta, or egg noodles.
