Avocado Chicken salad pinwheels are a great appetizer, light lunch, or for a picnic! Tortillas rolled up with a creamy avocado chicken salad and some cheese. Family approved and so delicious.

These delicious little pinwheels were so hard to get a photo of. I almost gave up but then I realized that you all be missing out on an insanely delicious appetizer. These are great for a football party (superbowl!), a picnic, light lunch or dinner, or even a potluck. I’ve got appetizer and finger foods on my brain as I try to think of what goodies to make for our super bowl party coming up soon. Two of my favorite things in life are avocados and chicken salad. So these were an instant hit.

Mix up a simple chicken salad with shredded chicken, mashed avocado, cilantro, green onion, lime juice, sour cream, and some seasonings. Spread it onto a large tortilla and roll it up tight and then slice.

To make slicing easier, and I think they taste better cold, place the rolled up tortilla into the fridge (wrap in saran wrap first) for 30 minutes and then slice. They will cut cleaner and look nicer. Once they are cut place them on your serving tray and devour. These are best eaten the day they are made as avocado tends to brown. There is some lime juice in the chicken salad so that will help keep them from browning.

Ingredients

  • 2 1/2 cups shredded chicken
  • 2 avocados, smashed
  • 1/4 cup sour cream
  • juice of 1 lime
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 cup shredded cheese (I use Monterey Jack)
  • Burrito size flour tortillas (you'll use about 5-6 of them)

Instructions

  • Combine all ingredients (except the tortillas) into a mixing bowl and mix well until everything is combined.
  • Using a spatula spread some avocado chicken salad onto a tortilla, making sure to spread to the edge. Roll up tight. Wrap the roll in some saran wrap and place in the fridge. Repeat with remaining flour tortillas until the chicken salad is gone.
  • Refrigerate for 30 minutes. Slice and put on serving plate.

Notes

If you want some spice use pepper jack cheese

For easy shredded chicken: place 2 chicken breasts in the crock pot and pour 1 can (14.5 oz) of chicken broth over the chicken. Cook on low for 6-8 hours or until chicken is tender. Take chicken out and shred with two forks.

You can use rotisserie chicken in place of the shredded chicken.
