Simple Ingredients Needed To Make Lightened-Up Buffalo Chicken Dip

  1. Cottage Cheese : I recommend using 2% milk fat cottage cheese but you could try using a lower-fat 1% cottage cheese if wanted (it is runnier and thinner because of the less fat in it, so it may affect the final dish).
  2. Buffalo Sauce : Use your preferred buffalo sauce for this delicious dip. Frank’s Hot Buffalo Sauce is such spicier, but there are tons of options out there; Sweet Baby Rays makes a buffalo sauce and a mild buffalo sauce (I use this one). Kinders brand has a buttery buffalo sauce that is not as hot as Frank’s. Or try the Hidden Valley buffalo ranch dressing.
  3. Ranch Seasoning Mix
  4. Garlic Powder
  5. Onion Powder
  6. Shredded Cooked Chicken : This is a great recipe to use a rotisserie chicken in, leftover chicken, and even canned chicken. I like to throw in 2-3 boneless, skinless chicken breasts + a can of chicken broth into the slow cooker – cook on LOW heat for 6-7 hours, shred it up (it’s fall apart tender) and it’s ready to use in the dip.
  7. Shredded Cheddar Cheese

What Are Some Substitutions I Can Make?

  • Cottage Cheese – You can’t substitute all of the cottage cheese but you could use 1/2 cup plain Greek yogurt + 1/2 cup cottage cheese if wanted.
  • Buffalo Sauce – For a more mild version use 1/2 cup mild buffalo sauce + 1/2 cup ranch dressing. Use Frank’s Red Hot for a spicier version of the dip, and use Sweet Baby Ray’s Mild Buffalo Sauce for a more mild spice level.
  • Cheddar Cheese – Although cheddar cheese holds up the best to the intense buffalo flavors, you can use your cheese of choice; Pepper Jack, Colby Jack, etc.

Serving Suggestions For Healthy Buffalo Dip

I put the dip in the center of a platter and then add some dipping options around it. Here are some ideas –

  • Cut Vegetables : Sliced Carrots, baby carrots, sliced cucumbers, bell peppers (all colors), celery sticks, and snap peas.
  • Breads : Pita, naan bread, or toasted baguette or crostini.
  • Tortilla Chips
  • Crackers : Wheat Thins, Triscuits, Nut Thins, Chicken In a Biskit crackers, or any other cracker are all great options for dipping.

Recipe FAQ’s

How spicy is this dip? Can I make it mild or spicier?

This dip is somewhat spicy because it’s a buffalo recipe – buffalo is a spicier taste and heat level naturally. If you want extra spicy then use Franks Red Hot Buffalo Sauce and/or add some hot sauce. For a more mild dip make sure you are using a mild buffalo sauce from Sweet Baby Ray’s brand or Kinders brand. You can also use Hidden Valley Buffalo Ranch dressing, or use 1/2 cup mild buffalo sauce + 1/2 cup ranch dressing instead of all buffalo sauce.

How can I make the dip prettier for serving?

Add a drizzle of ranch dressing or bleu cheese dressing over top the dip. Sprinkle on some thinly sliced green onions or blue cheese crumbles.

My dip seems to have extra liquid after I bake it. What is this?

Since you are making this with a low-fat dairy product (especially if you’re using 1% or fat-free cottage cheese), some of the whey will start to separate from it as it sits after baking. It doesn’t affect the flavor of the dip and you can just pour off the extra liquid or give it a good mix.

  • 1 teaspoon onion powder

  • 1 cup shredded cheddar cheese

3 cups cottage cheese, 1 cup buffalo sauce, 2 tablespoons ranch seasoning mix, 2 teaspoons garlic powder, 1 teaspoon onion powder
  • Add the shredded chicken into the mixing bowl with the cottage cheese mixture, and stir until combined.
    3 cups cooked shredded chicken
  • Transfer the cottage cheese buffalo chicken mixture into the prepared pan. Top with the shredded cheddar cheese.
    1 cup shredded cheddar cheese
  • Bake for 15-20 minutes or until the dip is heated through and the cheese is melted.
  • Serve with vegetable sticks, tortilla chips, crackers, or your other favorite dipping options.

Notes

Buffalo Sauce : This dip is somewhat spicy because it’s a buffalo recipe – buffalo is a spicier taste and heat level naturally. If you want extra spicy then use Franks Red Hot Buffalo Sauce and/or add some hot sauce. For a more mild dip make sure you are using a mild buffalo sauce from Sweet Baby Ray’s brand (they specifically make a mild buffalo sauce) or Kinders brand. You can also use Hidden Valley Buffalo Ranch dressing, or use 1/2 cup mild buffalo sauce + 1/2 cup ranch dressing instead of all buffalo sauce.
Cottage Cheese : I recommend using either 2% or 4% milk fat cottage cheese. I don’t recommend using a low-fat (1%) or fat-free cottage cheese because it has too much liquid and will add extra liquid to the dip once it’s baked. If using lower fat cottage cheese, you will want to drain off the extra liquid from the dip before serving. It doesn’t affect the final taste, but it doesn’t necessarily look appetizing.
