Easy Grinch Cookies Recipe (Grinch Cake Mix Cookies)

Get into the holiday spirit with these grinch heart cookies complete with the signature bright green color of the Grinch and a heart-shaped sprinkle for the Grinch’s heart. 

It’s the perfect cookie to add to your cookie platters or take it to a cookie exchange party. Simple to make with a white cake mix plus a few additions to ‘doctor up’ the cake mix to create these chewy cake-like cookies.

Ingredients Needed For These Adorable Grinch Cookies

  1. Powdered Sugar : Adds some sweetness to the exterior of the chewy green cookies. 
  2. Cornstarch : The cornstarch helps the powdered sugar stick to the outside of the cookies without being completely absorbed. It’s what will create that white snowy look on the chewy sugar cookies. 
  3. Melted Butter
  4. Large Eggs
  5. White Cake Mix : A vanilla cake mix can also be used. To get a true green color, I recommend sticking with the white cake mix. 
  6. Vanilla Extract
  7. Mint Extract
  8. Green Gel Food Color : I use Wilton brand Leaf Green gel food coloring for these holiday cookies. 
  9. Mini Heart Shaped Sprinkles : The small red heart sprinkle on each cookie represents the grinch’s small heart. You can find the online, at craft stores in the cake decorating aisle, or at your local supermarket. If you have leftover Valentine’s Day sprinkles you could also pick out the red hearts from that mix. You can also use small candy heart shapes for the grinch’s heart.

How To Make Grinch Christmas Cookies (Printable Recipe Card Below)

Preheat the oven to 375 degrees F. Prepare a cookie sheet(s) with parchment paper. Set aside for later. 

In a small bowl, whisk together the powdered sugar and cornstarch. Set aside. 

Using a stand mixer, or a large mixing bowl with a hand mixer, beat the melted butter and large eggs for 30 seconds. Dump in the white cake mix, vanilla extract, mint extract, and continue beating until combined. The batter should be thick and sticky.

Add green food coloring and mix until your desired color is reached.

Use a 1 tablespoon cookie scoop (small cookie scoop) to scoop the cookie dough. Drop the cookie dough balls into the powdered sugar and cornstarch mixture, and roll the ball around until it’s well coated. Place it onto the prepared cookie sheet.

Bake cookies for 10-12 minutes or until the tops look dry and the edges are set. Don’t overcook. You don’t want the cookie browned at all.

Remove the baking sheet from the oven and immediately press a heart sprinkle onto the top of each cookie. Allow the cookies to cool for 5 minutes and then remove them to a cooling rack to cool completely.

How To Store Leftover Cake Mix Grinch Cookies

Store the cookies at room temperature, inside an airtight container, for up to 5 days. You may also freeze these yummy cookies by allowing them to cool completely, then transfer them to an airtight container, a freezer-safe container or freezer bag, for up to 2 months. Let the cookies thaw at room temperature or in the fridge overnight. 

It’s best to store the cookies in a single layer with wax paper between each layer.

Tips For Making Christmas Grinch Cookies

  • The cookie batter will be sticky. It is best to scoop the batter from the mixing bowl, using a cookie scoop, and then immediately dropping the dough ball directly into the powdered sugar/cornstarch mixture. Once it starts to get coated, it will be much easier to touch it and roll it around to form a ball. 
  • Do not prepare the cake mix according to the package directions. We are only using the dry white cake mix inside the box!
  • Use salted butter or unsalted butter – whichever you prefer. I always have salted butter on hand cause that’s what I prefer to bake with. But either one will work.

  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/2 cup (1 stick) butter melted & cooled
  • 2 large eggs
  • 1 box (15.25 oz) white cake mix
  • teaspoon vanilla extract
  • ½ teaspoon mint extract
  • green gel food coloring
  • mini heart-shaped sprinkles (or mini red M&M's)

Instructions

  • Preheat the oven to 375℉. Prepare a cookie sheet(s) with parchment paper. Set aside.

    * Start with 1 drop and then add additional drops if needed.

Notes

Melted & Cooled Butter Tip : Unsalted butter or salted butter works fine. I prefer using salted butter. Place the butter inside a microwave-safe bowl and heat for about 25 seconds. You will end up with half melted butter + half soft chunked butter. Use a fork to stir it really well until it’s all melted and smooth. This will give you melted and cooled butter (because you’re not heating it for that long).
Gel Food Coloring : I use Wilton brand Leaf Green gel food coloring for these holiday cookies.
