More monster cookies! If you’re a regular reader of my blog then you know that I am slightly obsessed with all things monster cookie. I thought it would only be right to add these reese’s stuffed monster cookies to the collection.

I make these {the best} monster cookies at least once or twice a month. My kids L-O-V-E them. These no flour monster cookie bars happen to be the most popular dessert recipe on the blog.

And I could not write this post without mentioning my {no bake} monster cookie dough bars…… quite possibly the cure for any bad day! I just cannot get enough of the monster cookie combo; peanut butter, oats, chocolate chips, and m&m’s.

These giant monster cookies are made even better because you have an entire Reese’s peanut butter cup stuffed in the middle. Not only do you get a soft, thick, and chewy monster cookie, you also get this slightly melted & gooey miniature Reese’s peanut butter cup in the middle.

I like to think I have decent self control around sweets but I will be honest and say that I could not stop eating these cookies. All self control was gone once I tried these Reese’s stuffed monster cookies.Β

If you’re a fan of thick and soft cookies then you will love these. They are bigger than your hand and so thick. No flat cookies here. The trick to getting them so big and thick, is to use lots of dough per cookie.

When you scoop these cookies onto the cookie sheet, you will use a 1/2 cup measuring cup to “scoop” the dough. Now that is a serious cookie right there!

You can always make them smaller if that’s what you prefer. Just reduce the cooking time by a few minutes.Β

I went a bit crazy with pictures…… what can I say, I have a thing for giant cookies stuffed with a Reese’s! I really do hope you love these. As mentioned above, they are the perfect fix and cure all for a bad day.

Which is exactly why they were created in the first place. I was alone all week with the kids, while my husband was away on business and we needed some cookies fast! Everyone was happy after our cooking adventure πŸ™‚

Ingredients
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cornstarch
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cup quick oats
  • 1 cup mini chocolate chips
  • 1 cup mini m&m's
  • 8 snack-size Reese's peanut butter cups
Instructions
  1. Unwrap Reese's and place them in the freezer while you prepare the dough.
  2. Heat oven to 350 degrees and prepare a cookie sheet with parchment paper or spray with cooking spray.
  3. In a large bowl (or bowl of a stand mixer) cream together the butter, peanut butter, and brown sugar until light and fluffy, about 3-4 minutes. Mix in the egg and vanilla, scraping down the sides of the bowl as needed.

  4. In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and whisk to combine. Add the flour mixture to the wet ingredients and mix until just combined.

  5. Add the oats, chocolate chips, and M&M candies. Mix on low speed just until dough is combined.
  6. Using a 1/2 cup measuring cup, scoop a dough ball and place it in your hand. Flatten slightly and press a Reese's peanut butter cup in the middle. Fold up the sides of the cookie dough ball and roll into a ball. Place 4 cookie dough balls onto a cookie sheet.
  7. Shape each cookie dough ball into a "cookie shape". Press down the top slightly and shape the sides. The cookies won't spread much while baking so you want to shape then into a cookie shape so they won't bake into rounded balls.
  8. Bake the cookies for 12-14 minutes or until the edges are just starting to brown and the top still looks slightly undercooked. Remove from the oven and cool for 5 minutes on the baking sheet before moving them to a wire rack to cool completely.

Recipe Notes

If making smaller cookies then use the miniature Reese's peanut butter cups instead. Reduce cooking time by a few minutes.Β

For a pretty presentation, press a few additional mini m&m's onto the tops of the cookie dough balls after you shape them.
