Cheesy Ham Noodle Casserole Recipe

This creamy ham noodle casserole is a great recipe for leftover ham from the holidays or dinner. It’s a delicious meal that’s perfect for a busy night because you can make it ahead of time, or it’s really simple to combine it together using some prepared, ready-to-use ingredients, and dried seasonings. 

Tender egg noodles, chunks of ham, and crisp tender peas are smothered in a creamy sauce of cream of chicken soup, milk, sour cream, and seasonings. It bakes up in one casserole dish!

Simple Ingredients Needed

  1. Wide Egg Noodles
  2. Ham : You need 1 pound of ham for this recipe; you can use leftover ham from dinner, a ham steak that has been diced, buy some deli ham, or buy a package of chunks of ham (it comes in a 16 oz package or 1 pound). Make sure the ham is chopped small before adding it in with the other ham casserole ingredients. 
  3. Frozen Peas : My family likes very softened vegetable so I always used thawed frozen peas or buy a microwaveable bag of frozen peas and heat up according to the package directions. I then add the softened peas into the casserole mixture. If you want more of a crisp bite to the peas then add them into the casserole ingredients frozen. 
  4. Shredded Cheddar Cheese
  5. Cream of Mushroom Soup : This will provide the most flavor for this hearty ham casserole but feel free to use cream of chicken soup or cream of celery soup instead. Make sure you are using the condensed soup and not regular soup. 
  6. Whole Milk
  7. Sour Cream : I prefer the taste and thicker texture of full-fat sour cream but lite or reduced-fat can be used if that’s what you prefer. 
  8. Garlic Powder
  9. Onion Powder
  10. Black Pepper
  11. Plain Panko Breadcrumbs

How To Make Ham and Noodle Casserole With Leftover Ham (Printable Recipe Card)

Preheat the oven to 350 degrees F. Spray a 9×13 casserole baking dish with nonstick cooking spray. Set aside. 

Cook the egg noodles, in a large pot of salted water, according to the package directions. Cook to al dente or softer depending on preference.

In a large mixing bowl, stir together the ham, peas, shredded cheddar cheese, cream of mushroom soup, whole milk, sour cream, garlic powder, onion powder, and black pepper until combined well. 

Fold the noodles into the ham mixture and stir until thoroughly combined. 

Transfer the mixture to the prepared casserole dish and spread it out evenly. Sprinkle the panko breadcrumbs over the top of the casserole. 

Cook for 40-45 minutes or until the casserole is warmed through and the breadcrumbs are golden brown.

How To Store Leftovers

Any leftovers of this ham and noodle dish should be stored in an airtight container, in the refrigerator, for up to 4-5 days. You can also leave the leftover casserole inside the casserole dish and cover it with a lid or plastic wrap for storage. 

  • To Freeze : Once completely cooled, place it inside an airtight freezer-safe container and freeze for up to 2 months. You can also double the recipe, or place the recipe inside two 8×8 baking pans, and make one for now and freeze one for later. Once frozen, allow the casserole to thaw overnight in the fridge before reheating. 
  • To Reheat : Preheat the oven to 350 degrees F, place leftovers inside an oven-safe dish or bake the thawed frozen casserole, and cover it with tin foil. Bake for 15-20 minute or until thoroughly heated through. You can also reheat individual servings of the casserole inside the microwave.

What Are Some Substitutions I Can Make?

  • Wide Egg Noodles : Penne, rotini, elbow macaroni, or bowtie pasta are all good alternatives. Just cook according to the package directions. 
  • Frozen Peas : You could substitute with green beans, corn, carrots, etc. 
  • Cheddar Cheese : Use your favorite cheese here! You could even combine cheeses and use two different kinds. Other great alternatives are Colby Jack, sharp cheddar cheese or mild, Swiss cheese, Monterey Jack, Pepper Jack, or white cheddar cheese. 
  • Cream of Mushroom Soup : Try using cream of chicken soup, cream of celery soup, or cheddar cheese soup. 
  • Panko Breadcrumbs : You can also use crushed Ritz crackers, plain breadcrumbs, or crushed crispy fried onions.

What Should I Serve With It?

Serve this easy casserole alongside a chopped Caesar salad or green salad with some fresh veggies mixed in. I love to buy a bagged salad mix and then add some chopped cherry tomatoes, sliced cucumbers, and any other vegetables I have in the fridge. You could also buy a Caesar salad kit from the grocery store to make prep work really easy for the side dish. Another great option is bread to soak up that creamy sauce with. 

Can I Make This Ahead of Time?

If you would like to make this dish ahead of time, assemble everything up to the point of the breadcrumbs. Do not add the breadcrumbs, but instead, cover the casserole dish with foil or plastic wrap and place it in the fridge until you’re ready to use it. When ready to bake, sprinkle the breadcrumbs over top and bake according to the recipe. You will need to add 10 minutes to the bake time since it will be cooled from the fridge. 

Can I Cover It While Baking To Avoid Crispy Noodles?

Yes, you can cover the casserole with aluminum foil while baking to avoid the crispy noodle edges. Although, I do recommend taking the foil off for the last 15 minutes or so of the bake time to allow time for the breadcrumbs to get golden brown and crispy.

  • 1 pound ham (diced, 2 cups)
  • 2 cups frozen peas
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 1/2 cup plain panko breadcrumbs

Instructions

Notes

Panko Breadcrumbs : This is optional and can easily be left off if wanted. The panko provides a crunchy, golden brown topping to the casserole. You can also use crushed Ritz crackers or Club crackers. 
Do I Cover While Baking? : You can cover the casserole with tin foil while baking if wanted. If it’s uncovered, the egg noodles peeking out will get crispy (which my kids don’t love), so I will usually cover the casserole with foil and then remove the foil for the last 15-20 minutes of the bake time.
Frozen Peas : My family prefers super soft veggies so I use completely thawed peas. But there are other options too; use canned peas that have been drained and rinsed, or cook a microwaveable bag of peas according to package directions and then use 2 cups of the cooked, softened peas. If you are using frozen peas from the freezer (which is fine) the peas will come out more crisp tender. 
Ham : Use up leftover diced ham, buy a package of diced ham (16 oz), get some fresh sliced deli ham and chop it up.
