Menu Plan Monday is a new series on Together as Family that brings you delicious and family-approved dinner ideas for the week. Each menu includes six dinners plus one tasty dessert to enjoy!
We woke up to snow! Lots of it with over 6 inches and it is still coming down… spring weather in Utah is always interesting. One day it’s summertime and my kids are playing in the water and wearing shorts, and the very next day we wake up to a snowstorm. It’s one of the things that comes with living in this beautiful state with all 4 seasons.
I of course had to include my family’s favorite chili recipe because when the temperatures are low my family always loves chili with cornbread muffins. Comfort food at its finest. And it’s Easter this week so you know I had to include our favorite, tried & true Easter dinner faves + dessert.

MONDAY
These sweet and savory sloppy joes are just what you need for a fun twist to classic sloppy joes. A sweet and caramelized sloppy Joe mixture that simmers with pineapple, ground beef, and a sweet sauce. Serve with hamburger buns.
TUESDAY
An easy dump & go crockpot meal that is so versatile! Serve as chicken tacos, burrito bowls, nachos, quesadillas, or roll them up in small flour tortillas and make taquitos (bake in a 375 degree oven and spray the taquitos with cooking spray to crisp them up in the oven).
WEDNESDAY
I always make my Honey Cornbread Muffins or this Amazing Best Cornbread recipe! Don’t forget the toppings like sour cream, shredded cheese, and Fritos corn chips for the chili.
THURSDAY
The steak marinates in a delicious marinade which is what makes these the best fajitas – loaded with flavor! Use up some of the leftover toppings from the salsa chicken like guacamole and sour cream.
FRIDAY
This crispy coated parmesan chicken cooks on the stove top in a skillet pan. I always serve it alongside my Garlic Parmesan Pasta for a dinner that all my kids love.
SATURDAY
Kitchen’s Closed! Have leftovers, go out, get take-out, or have a cold cereal night. My kids always love that!
SUNDAY
Easter Sunday – I always make my crockpot brown sugar ham along with these Funeral Potatoes, Classic Deviled Eggs, and this Cranberry Fluff. Every single year, without fail, I make my Carrot Cake. It’s incredible and even carrot cake haters end up LOVING it. This No Bake Coconut Cream Pie is another Easter fave.
DESSERT OF THE WEEK
Make this fun Easter treat this week with the kiddos. It’s a sweet and fun treat that is colorful and always a hit with the kids.
