These oven baked chicken fajitas bake in one sheet pan for an easy dinner any night of the week! They’re healthy, full of veggies, lots of color, and they can be dressed up with all the toppings or eaten plain. I love fajita night because I put out different bowls of toppings and sauces and everyone creates their own.Â
Whenever my kids can make their own dinner plate and choose what they put on it, it’s always a guarantee that they’ll willingly eat it.Â

Ingredients Needed
- Boneless, Skinless Chicken Breasts – You need about 2 pounds of chicken for this recipe, which is equal to about 3-4 chicken breasts, depending on the size of them. You will also need a sharp knife and a cutting board to slice the chicken into strips. Not too thick or else they won’t cook through during the oven time.Â
- Red Onion – Slice these very thin in half-moon shapes.
- Bell Peppers – The recipe calls for 3 of them and you can use any color, various colors, etc. I like to buy a 3-pack of them and it usually comes with a red bell pepper, orange bell pepper, and yellow bell pepper.Â
- Oil – Any neutral flavored cooking can be used. Canola, vegetable, extra-virgin olive oil, avocado oil.Â
- Chicken Taco Seasoning Packet – This has a different flavor than regular taco seasoning and it’s so good! I highly recommend only using this one.Â
- Lime – Fresh lime juice is the chef’s kiss on top of these fajitas when they come out of the oven.Â
- Chopped Cilantro – Paired with the fresh lime juice, it’s amazing!
How To Make Easy Chicken Fajitas on One Sheet Pan
Follow these easy steps to make this dinner for your own family. Be sure and read to the bottom of the page where there is a detailed recipe card, a printable option, and a pin it button so you can save it for later.Â
- Prep : Preheat the oven to 400 degrees F. Line a sheet pan (aka – cookie sheet) with aluminum foil or parchment paper for easy clean-up. If you don’t line it, just be sure and spray the sheet pan lightly with cooking spray. Also, make sure you use a baking sheet that has sides on it.Â
- Chicken Fajitas/ Seasoning : Place the chicken strips, red onion, bell pepper strips, and oil into a large mixing bowl. Toss to coat everything in the oil. Sprinkle the chicken taco seasoning packet over top and mix until all the chicken and vegetables are coated in seasoning.Â
- Bake : Spread the chicken fajita mixture not the prepared baking sheet in an even layer. Bake for 20 minutes or until the vegetables are fork tender and the chicken has reached an internal temperature of 165 degrees F.Â
- Garnishes : Remove the pan from the oven and drizzle the fresh lime juice and chopped cilantro over top.Â

- Thinly Sliced Onion & Bell Peppers : Make sure that you cut these thin so they’ll cook and soften in the bake time given. My family likes softer bell peppers in fajitas so I make sure to cut them really thin so they will soften up quite a bit while baking.Â
- Chicken Strips : Chunks also work. I like thin strips because it matches the shape and size of the sliced onion and vegetables. You just want to make sure that they are not so big that they won’t cook in the bake time given. About 1-inch wide strips, maybe slightly smaller, are a great size to aim for. If doing chunks, cut them into small bite-sized pieces.Â

Sheet Pan Chicken Fajitas
Ingredients
- 2 pounds boneless, skinless chicken breasts (about 3-4 pieces)
- 3 bell peppers (various colors)
- 1/2 large red onion
- 2 tablespoons oil (canola, vegetable, extra-virgin olive oil)
- 1 packet chicken taco seasoning
- 1 tablespoon freshly squeezed lime juice (from 1 lime)
- 3 tablespoons chopped cilantro
Instructions
- Preheat oven to 400° F. Prepare a sheet pan with rimmed sides on it (12"x17"), by lining it with parchment paper or foil for easy clean-up. * You can also just spray it lightly with cooking spray
- Prep : Using a sharp knife and a cutting board, slice the 3 bell peppers into thin strips. Slice 1/2 of a large red onion into thin strips.Then cut each chicken breast into thin strips.
- Place the chicken strips, bell pepper slices, and red onion slices into a large mixing bowl. Drizzle the oil over top and toss to combine everything together.
- Sprinkle the chicken taco seasoning over top and mix to combine until everything is well coated in the seasoning.
- Place the chicken fajita mix in an even layer on the prepared sheet pan.
- Bake for 20 minutes or until the vegetables are fork tender (or softened to your preference) and the chicken reaches an internal temperature of 165° F.
- Remove the pan from the oven and drizzle the fresh lime juice over top and sprinkle on the chopped cilantro. Serve immediately with warmed flour or corn tortillas and any other additional toppings you want.
