Ingredients Needed

  • Boneless, Skinless Chicken Breasts – You need about 2 pounds of chicken for this recipe, which is equal to about 3-4 chicken breasts, depending on the size of them. You will also need a sharp knife and a cutting board to slice the chicken into strips. Not too thick or else they won’t cook through during the oven time.
  • Red Onion – Slice these very thin in half-moon shapes.
  • Bell Peppers – The recipe calls for 3 of them and you can use any color, various colors, etc. I like to buy a 3-pack of them and it usually comes with a red bell pepper, orange bell pepper, and yellow bell pepper.
  • Oil – Any neutral flavored cooking can be used. Canola, vegetable, extra-virgin olive oil, avocado oil.
  • Chicken Taco Seasoning Packet – This has a different flavor than regular taco seasoning and it’s so good! I highly recommend only using this one.
  • Lime – Fresh lime juice is the chef’s kiss on top of these fajitas when they come out of the oven.
  • Chopped Cilantro – Paired with the fresh lime juice, it’s amazing!

Sheet Pan Chicken Fajitas FAQ’s

  • How To Store Leftover Chicken Fajitas

    • Leftovers store well in an airtight container, in the fridge, for 3-4 days. You can reheat leftovers in the microwave , over the stove, or in the oven. You may need to add a small amount of water when reheating. Make sure that the internal temperature of the chicken is 165 degrees F before serving reheated leftovers.
    • Leftovers are also good served cold over top a salad.
    • Put leftovers inside a lettuce wrap for a low-carb lunch the next day.
  • Substitution & Variation Ideas

    • Not only are these sheet pan oven baked chicken fajitas easy to make, but they’re also so easy to customize too! Here are some ideas.
      • Add Fresh Garlic : Adding some freshly minced garlic, chopped garlic, or garlic paste to the chicken mixture is always a good idea.
      • Seasoning Packet : Although I highly recommend using the chicken taco seasoning packet, you could also use a fajita seasoning mix packet, taco seasoning packet, or use your favorite homemade taco seasoning mix.
      • Chicken : Use chicken tenderloins in place of chicken breast. You will probably still have to slice them but they’re smaller so they won’t need as much prep work.
      • Bell Peppers : Use any combination of bell peppers that you want!
      • Onion : A sweet onion, white onion, or yellow onion are all great substitutes for the red onion.
      • Make It Spicy! : Add some sliced jalapeños into the fajita mix. Add some cayenne pepper. Use a packet of hot taco seasoning mix. Top the fajitas with shredded pepper jack cheese and/or sliced jalapeños.

Recipe Tips

Here are a few of my helpful tips so that you can have success recreating this recipe in your own kitchen ♥

  • Use Fresh Lime Juice : For the best flavor use freshly squeezed lime juice from one lime.
  • Thinly Sliced Onion & Bell Peppers : Make sure that you cut these thin so they’ll cook and soften in the bake time given. My family likes softer bell peppers in fajitas so I make sure to cut them really thin so they will soften up quite a bit while baking.
  • Chicken Strips : Chunks also work. I like thin strips because it matches the shape and size of the sliced onion and vegetables. You just want to make sure that they are not so big that they won’t cook in the bake time given. About 1-inch wide strips, maybe slightly smaller, are a great size to aim for. If doing chunks, cut them into small bite-sized pieces.
