I know most families have their “go-to” meals. You know, the meals that you make all the time because they’re delicious, easy, and everybody loves them…. well, my friends, my two “go-to” meals are this creamy fiesta chicken and this creamy beef noodle bake.
I love this slow cooker creamy fiesta chicken because you literally dump everything into the slow cooker and let it cook all day. When you’re ready, you have perfectly soft & tender shredded chicken in a creamy sauce. Oh that sauce! Don’t get me started. It’s hands down the best part of this!
It’s also a perfect dinner for those busy back-to-school weeknights. Prepare it in the morning when you have a bit of extra time and then when it’s dinner, all you have to do is make some rice and lay out your toppings. You can also leave it on the warm setting in the slow cooker and eat it when it’s convenient.
You can use fresh chicken breasts or frozen. Personally, I prefer to always use fresh chicken in the slow cooker because you get lot’s of extra liquid from the frozen chicken, which I think dilutes the flavors more. Plus, I can get fresh chicken breasts cheaper per pound than frozen!
Mix up a couple other pantry staple ingredients and pour it on top of the chicken. Give it a good mix if you want to. But you don’t have to. Let it cook all day and then shred the chicken, and drop a bar of cream cheese on top. Cover it back up and let it cook about 30 more minutes. This helps the cream cheese get nice and soft so it mixes right in.
Serve over rice and your choice of toppings. It really is the easiest and most fuss-free dinner you’ll ever make.
I usually serve this with white rice or this cilantro lime rice. It’s already so creamy that you really don’t need cheese or sour cream, but you can certainly use them if you want to! We love chopped green onions, cilantro, and sliced avocado. But again, use whatever toppings you want.
The recipe as written is very kid-friendly. It’s not spicy but still really flavorful. My kids swear they hate rice & beans but yet they gobble this stuff up every time we have it for dinner 🙂 If you want more of a spicy kick use hot salsa or add a can of green chilies. If you don’t like black beans swap it out for a bean that you like. This dish is really versatile to fit your tastes.
Low-fat cream cheese works really well in this recipe. That’s what I usually use when I make this.
This recipe makes quite a but so it’s probably a sure thing that you’ll have leftovers. Which is great because we love to make quesadillas with the leftovers, or you can make burritos or nachos too. So you’re basically getting two dinners with one! Yay 🙂

- 4 boneless, skinless chicken breasts
- 1 can (15.5 oz) black beans, drained & rinsed
- 1 can (15 oz) corn, drained
- 1 jar (16 oz) salsa
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 - 1 teaspoon salt ( I use 1 teaspoon kosher salt)
- 1 block (8 oz) cream cheese
- Spray inside of slow cooker with cooking spray.
- Lay chicken breasts on the bottom.
- In a mixing bowl combine black beans, corn, salsa, and spices. Stir together and dump over the chicken. Stir slightly to make sure chicken is covered.
- Cook on low heat for 6-8 hours.
- At 30 minutes left of cooking time; shred the chicken with 2 forks and mix everything together. Place block of cream cheese on top. Cover. Let cook remaining 30 minutes.
- Uncover and mix all together (the cream cheese should be completely soft by this point).
- Serve over rice and with your desired toppings.
Use whatever beans you like.
For a spicy kick, use hot salsa and/or a can of diced green chilies.
