I have had a thing for rice bowls lately. I posted these turkey taco burrito bowls last week and I am still obsessed with them! Rice & beans are quite literally my two favorite foods. I would take a bowl of rice and beans before a slice of chocolate cake, cheesecake, cookies, etc. You name it and I would rather eat rice & beans 🙂 So naturally rice bowls are pretty much my best friend.

Hawaiian haystacks are one of our favorite dinners because everyone can make their own. A haystack starts with a base of rice and then it’s covered in a creamy chicken gravy and topped with toppings of your choice; pineapple, green onions, peas, cheese, are a few of our favorites.

You can use regular white or brown minute rice, or even those 1 minute microwaveable rice pouches. But, the cilantro lime rice is so good and quite simple to make. Combine some ingredients in a saucepan and let it cook.

The seasoned ground beef mixture simmers on the stove top while the rice is cooking. I like to chop up and prepare all my toppings while the rice and meat are cooking. That way when the rice and meat are done, dinner is ready to serve!

I love to put the toppings, rice, and the meat into bowls and lay it out buffet style on the table. Then everyone can go to town and create their own. Please don’t forget the corn chips. They seriously make these Mexican haystack rice bowls amazing! We like to scoop the corn chips into our haystack rice bowl or you can crush some on top of your rice bowl.

Get creative with your toppings. Our favorites are shredded cheese, lettuce, pico de gallo, chopped tomatoes, sour cream, avocado or guacamole, and Fritos corn chips. You could also top with cilantro, jalapeno, olives, and corn.

If you want a spicier rice bowl use pepper jack cheese. If you want really spicy use a can of hot green chilies for the meat mixture and/or add some cayenne pepper to it as well. I always make the recipe as is and my kids love it. It’s not too spicy for them.

Ingredients

    cilantro lime rice
  • 2 tablespoons butter
  • 1 1/4 cups basmati rice
  • 2 1/4 cups chicken broth
  • juice and zest of 1 large lime
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • meat
  • 1 1/2 lbs lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • 1/4 teaspoon pepper
  • 1 can (8 oz) tomato sauce
  • 1 can (4.25 oz) diced green chilies
  • 1 can (15 oz) chili beans, do not drain
  • toppings
  • corn chips
  • shredded lettuce
  • shredded cheese
  • chopped tomatoes
  • pico de gallo
  • guacamole
  • sour cream

Instructions

  1. For the cilantro lime rice: add the butter and dry basmati rice to a saucepan. Heat over medium-high heat until butter has melted and the rice is slightly toasted. Stir often so the rice does not burn. Add in the remaining ingredients. Bring to a boil. Cover and reduce heat to medium-low. Cook for 15-20 minutes or until rice is done. Fluff with a fork.
  2. For the meat: Cook and crumble the ground beef in a skillet pan over medium-high heat until no longer pink. Drain any grease. Add the seasonings, tomato sauce, green chilies, and chili beans. Stir to combine. Turn heat to medium-low and let simmer while the rice cooks.
  3. Layer rice in a bowl, top with the meat mixture, and then top with your choice of toppings.

Notes

My family does not like whole green chilies so I blend the green chilies and tomato sauce in the blender before adding it to the meat mixture.

Chili beans are pinto beans in a mild chili sauce. You'll find them by the beans in the grocery store and they will say 'chili beans' on the can.
