Easy Cheesy Chicken Casserole Recipe

Dump-and-Bake casseroles are always at the top of my go-to list for an easy dinner idea. They’re great for dinnertime because it’s completely hands-off during the cook time. Simply mix all the ingredients in a 9×13 casserole pan and then let the oven do all the work. 

The tender egg noodles, creamy sauce of condoned soups, chunks of chicken, and cheese make this an easy family favorite because it appeals to everyone.

Simple Ingredients Needed

  1. Boneless, Skinless Chicken Breasts : The recipe calls for 2 pounds which is about 3 large chicken breasts. Trim the breast of any fatty or weird pieces, and then cube it into small 1-inch sized cubes. 
  2. Wide Egg Noodles : This is a dump & bake casserole meaning that you put everything into the casserole dish – the dry noodles! Do not cook them before. 
  3. Chicken Broth : Chicken stock, chicken bone broth, or reduced-sodium versions can all be used. 
  4. Cream of Chicken Soup With Herbs
  5. Cream of White Cheddar Soup : This is a newer condensed soup to the lineup. Similar to the condensed cheddar cheese but it’s white cheddar. 
  6. Onion Powder, Garlic Powder, Black Pepper
  7. Shredded Cheddar Cheese

How To Make Cheesy Chicken Casserole With Egg Noodle (Printable Recipe Card)

Preheat the oven to 350°F and spray a 9×13 casserole dish with nonstick cooking spray.

Add the chicken, egg noodles, chicken broth, creamed soups, onion powder, garlic powder, and black pepper to the casserole dish and mix together until thoroughly combined.

Cover tightly with aluminum foil and bake for 30 minutes. 

Stir the chicken casserole mixture and press down to make sure all the noodle are covered. Cover the pan again with aluminum foil and bake for another 30 minutes.

Remove the foil and stir the mixture. Sprinkle the shredded cheddar cheese on top and bake for an additional 5-10 minutes, uncovered, until the cheese melts and the chicken has reached an internal temperature of 165°F. 

Let the casserole sit and cool at room temperature for about 10 minutes before serving warm. Enjoy!

How To Store Leftover Casserole

Leftovers should be stored in an airtight container, in the refrigerator, for up to 3 to 4 days. 

To reheat, place single servings in the microwave for 45-60 second intervals, stirring in between until thoroughly heated. For larger portions, place in the oven at 350°F for 15-20 minutes or until hot. 

To freeze, place in a freezer-safe airtight container or Ziplock bag, and freeze for up to 3 months. Defrost in the refrigerator overnight before reheating. Please note that once the egg noodles are frozen and then thawed, they will have a softer, mushier texture. It’s not my favorite so I never freeze this recipe.

Substitutions & Ingredient Notes

  • Egg Noodles : You could also use a small shaped pasta sauce as medium shells, ziti, or cavatappi. It’s best to use egg noodles as they don’t need as much liquid or time to cook. I have never tried this casserole using anything besides egg noodles. Make sure they are wide egg noodles. 
  • Chicken Broth : Chicken stock, chicken bone broth (I prefer using this for the flavor), or the reduced-sodium versions can all be used instead. 
  • Condensed Creamed Soups : The recipe calls for cream of chicken soup with herbs and white cheddar cheese soup. I highly recommend you use these two. Of course, they can be swapped out for other creamed soups (such as cream of mushroom soup, etc), but for the best taste, I recommend sticking to the two that are called for. 
  • Cheddar Cheese : Cheddar cheese comes in shape, extra sharp, medium, or mild varieties. It also comes in white cheddar as well. Any of them can be used it just depends on your preference. It’s also highly recommend to shred the cheese from a block rather than using pre-shredded bagged cheese.

Serving Suggestions 

Serve with a side salad loaded with your favorite veggies, or with an oven-roasted vegetable on the side such as roasted carrots or Parmesan Garlic Brussels Sprouts. It’s also really good served with a slice of toasted garlic bread or Cheesy Garlic Bread

This delicious casserole is a full meal on its own, which is my favorite part about it, but if you want a side dish to serve with it – I love serving it with some fresh fruit or a fruity side dish salad – such as Pear Jello Recipe.

Recipe FAQs

Do I Need To Cook The Noodles Before Adding Them?

No, this recipe is designed to be a dump & bake casserole – meaning that all the ingredients get ‘dumped’ into the casserole dish, even the dry uncooked egg noodles, and then it will all bake together in the oven. The bake time is plenty long enough that the chicken will cook to the correct temperature for serving. 

Can I Add Other Seasonings?

It may seem like there is not much seasonings or salt in the recipe, but the two canned items, dried seasonings, and full salted chicken broth in the recipe do a very good job on their own. If you are using reduced-sodium broth, then yes, you may want to add some salt. If you’re using regular cream of chicken soup then you’ll probably want to add some additional dried herbs. I make the recipe as is, using regular salt versions of all the items, and my family loves it. Seasoning the chicken cubes with some kosher salt is another idea if you want to add some additional flavor.

  • 2 pounds boneless, skinless chicken breasts (about 3 large chicken breasts)
  • 5 cups wide egg noodles uncooked
  • 2 cups chicken broth
  • 1 can (10 oz) condensed cream of chicken soup with herbs
  • 1 can (10 oz) condensed cream of white cheddar cheese soup
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese (mild, medium, sharp, or white)

Instructions

  • Preheat the oven to 350°F. Spray a 9×13 casserole dish with nonstick cooking spray.
  • Trim off any fatty pieces or weird pieces of each chicken breast, and then cut the chicken into small 1-inch cubes.

Notes

Chicken Broth : I recommend using full-sat chicken broth, chicken stock, or chicken bone broth (my favorite). There is not additional salt called for in the recipe, so if you’re using a lower-sodium broth or condensed soups, then I would recommend sprinkling some kosher salt onto the chicken cubes before adding them into the casserole dish.
