Taco soup just happens to be one of my favorites! I’ve tried lots of different recipe but I always come back to this recipe. There is no extra chopping required (yay for less dishes!) and this soup comes together in about 30 minutes. I usually let mine simmer some extra time so my version is more like 45 minutes. But, it can come together in 30 minutes so it makes for a great dinner during the busy weeknights.

I love the addition of the ranch seasoning mix. It seriously makes this soup so yummy. You can’t taste the ranch seasoning but you can taste the difference it makes in this soup. It makes me wonder why anyone makes taco soup without the ranch seasoning?!? I posted this HOMEMADE RANCH SEASONING MIX the other day. Super yummy & easy to mix up.

Don’t forget to serve this with tortilla chips, sour cream, and shredded cheese. We love to crunch up our tortilla chips and sprinkle them on top or use the chip to dip into the soup. Can’t go wrong either way!

{simple, 30-minute} Taco Soup

If you want a spicier taco soup; replace the can of diced tomatoes with a can of diced tomatoes w/ green chilies AND/OR add a 4 oz can of chopped green chilies. I make the recipe as is and it is perfectly flavored and spiced for all my kids to eat.

I like to blend up my can of stewed tomatoes so that there are no tomato chunks in the soups.


  • 1 1/2 to 2 lbs ground beef
  • 1 envelop taco seasoning or 2 tablespoons homemade
  • 1 1/2 cups water
  • 1 can (16 oz) mild chili beans, undrained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 can stewed tomatoes
  • 1 can petite diced tomatoes
  • 1 envelope ranch seasoning mix, or 2 tablespoons homemade
  • tortilla chips, sour cream, shredded cheese


  1. In a soup pot over medium-high heat, cook ground beef until no longer pink. Drain. Return to soup pot and add taco seasoning and mix together.
  2. Add in the remaining ingredients and stir together. Bring to a boil. Reduce heat to medium-low and let simmer, uncovered for 20 minutes. Or longer if desired.
  3. Serve with tortilla chips, sour cream, and shredded cheese.
