Easy Hamburger Soup Recipe

This easy hamburger soup is a hearty. comforting one-pot meal made with ground beef, tender potatoes, vegetables, and a tomato based savory broth. It’s an easy soup recipe, the ultimate comfort food, and guaranteed to be a family favorite for weeknight dinners. 

Hamburger soup is one of those classic soup recipes that feels like comfort food without requiring a lot of work. Everything cooks together in one pot, making cleanup easy and the flavors get better the longer it simmers on the stovetop.

Ingredients Needed

  1. Ground Beef : I use lean ground beef (93/7) but you can use your favorite hamburger meat for this recipe. 
  2. Onion : A yellow onion, white onion, or sweet onion are the best choices. 
  3. Garlic Cloves : Fresh garlic cloves that have been minced or pressed, use chopped garlic from a jar, or garlic paste. 
  4. Beef Broth : For the best flavor use regular full-salted beef broth but if there are sodium concerns or restrictions, then reduced-sodium broth works well. I love using the Kettle & Fire brand of beef bone broth; other options are beef stock, beef bouillon + water, or beef broth. 
  5. Yukon Gold Potatoes : These are creamy, buttery potatoes that are so good in this hamburger vegetable soup.  Buy bulk Yukon gold potatoes and chop them into small, bite-sized pieces or use baby Yukon gold potatoes. I prefer the potatoes peeled with the skin off, but the skin can stay on if that’s your preference. 
  6. Petite Diced Tomatoes : A 28 ounce can. 
  7. Tomato Sauce : A 15 ounce can.
  8. Frozen Mixed Vegetables : A 12 ounce frozen bag of veggies. 
  9. Worcestershire Sauce
  10. Hamburger Seasoning : Lots of options here! I love the Kinders brand and that’s what I use, but use your favorite hamburger seasoning blend. 
  11. Yellow Mustard
  12. Bay Leaf : Remember to remove this from the soup before serving!

How To Make Hearty Hamburger Soup (Printable Recipe Card)

In a large pot, over medium-high heat, cook and crumble the ground beef and onion until the beef is browned and the onions are softened. 

Stir in the garlic cloves and cook for an additional 1 minutes. Drain or soak up any excess grease from the pot.

Add the remaining ingredients and stir. Bring the soup to a gentle simmer/boil, and let it cook for 20-25 minutes, reducing the heat to medium once simmering if needed. The potatoes need to be fork-tender (easily pierced with a fork) and that’s when you know it’s done. 

Remove the bay leaf and serve the hamburger soup warm, with some crusty bread. Enjoy!

How To Store, Reheat, and Freeze Leftover Hamburger Soup

Leftover soup should be stored in an airtight container, in the refrigerator, for 3 to 4 days. 

To reheat, place the soup in a saucepan over medium-low heat, stir occasionally, and heat until thoroughly heated. About 5-8 minutes. You can also microwave individual portions for 30-40 seconds, stirring between each, until heated through. 

To freeze, place completely cooled soup in a freezer-safe container or freezer bag, making sure to leave room for expansion of the broth once frozen. Freeze for up to 3 months, defrost in the refrigerator overnight before reheating.

Substitutions & Ingredient Notes

  • Ground Beef : I use 93/7 ground beef but other options are 85/15 or 90/10. You could also use ground turkey or ground chicken if you wanted to as well. 
  • Onion : I prefer a sweet onion or yellow onion, another option is a white onion. 
  • Garlic Cloves : Fresh garlic cloves are best (use a garlic press or mince them with a knife). Other options include chopped garlic from a jar or garlic paste. 
  • Beef Broth : Beef stock, vegetable stock or broth, chicken broth or stock,  or a beef mushroom stock or broth is another option. You can also use beef bouillon + water  or the lower-sodium broth options all work as well if needed. 
  • Yukon Potatoes : These are the best ones to use for their buttery and creamy flavor and texture, but red potatoes work also. 
  • Frozen Mixed Vegetables : Another alternative would be two cans (15 ounces each) of mixed vegetables, drained. 

Pro Tips From The Test Kitchen

  • I love to simmer the soup for even longer than the 20 to 25 minutes listed in the recipe. The flavors blend together more and the soup just gets so cozy and delicious with a longer simmer time. To really infuse the flavors, cover the pot with a lid during the simmer time, and then remove it for a few minutes after it’s done cooking so the soup can thicken slightly and some of the liquid can evaporate. 
  • I recommend using full salt beef broth in this soup recipe. There is no added salt, so the beef broth is a main ingredient to really infuse flavor into the soup. Of course, use reduced-sodium broth if there are dietary needs or restrictions; but for best results, use full salted beef broth. I love the Kettle & Fire brand of beef bone broth, it’s so yummy!
  • I use the Kinder’s brand of hamburger seasoning. I have used the Butcher’s Burger Blend and the Buttery Burger Blend and they have both been fantastic in this soup. There are lots of other options from different brands so pick one that sounds good or pick your favorite. 
  • Yukon potatoes have a creamy, buttery flavor that is perfect for this beef soup recipe but another option is red potatoes if needed. 
  • Make sure that all the potatoes are about the same size so they cook in the same amount of time. Aim for each potato piece to be about ½”-inch in size, so fairly small pieces. You can use baby Yukon potatoes or buy Yukon potatoes in bulk (medium sized potatoes). I prefer to peel the skin off of the potatoes but you can leave the skin on if that’s your preference.

Can I Make Stove Top Hamburger Soup In The Slow Cooker?

Yes, you can make this comforting soup recipe in the slow cooker. Cook and crumble the ground beef and onion, add the garlic, and then drain excess grease as the recipe instructs. Transfer the cooked ground beef mixture to a crock pot and then add the remaining ingredients. Cook on LOW heat for 4 hours, or more time as needed for the potatoes to be fork-tender. 

Can I Turn It Into a Cheeseburger Soup?

Serve each bowl of soup topped with some shredded cheddar cheese or shredded American cheese. You can also serve the soup with some cheese toast or grilled cheese sandwiches to get that ‘cheeseburger’ flavor in the soup. You can also serve the soup with a dollop of sour cream to mimic the creamy flavor of a cheeseburger.

  • 1 pound lean ground beef (I use 93/7)
  • 1 onion finely diced
  • 3 garlic cloves minced or pressed
  • 4 cups beef broth
  • 3 medium Yukon Gold potatoes (½"-inch diced pieces)
  • 1 can (28 oz) petite diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 bag (12 oz) frozen mixed vegetables
  • 1 tablespoon hamburger seasoning blend
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1 bay leaf

Instructions
