A Really Easy Dip Recipe – Only 5 Ingredients!

You’re going to love this super simple dip! The ‘fiesta’ combination of corn, tomatoes, and cheese really makes this a delicious dip for any gathering or party. So creamy with tons of flavor. There are so many ways to customize this dip as well, so read below for all my tips. 

We love this served with tortilla chips and veggies sticks (carrots, celery, and bell peppers).

Ingredients Needed

  • Sour Cream – I prefer the taste and texture of full-fat sour cream so that is what I recommend using. Reduced-fat sour cream can be used but it does contain more water in it which can make the dip not as thick & creamy. But it will work just fine if wanted. 
  • Shredded Cheddar Cheese – You can use mild, medium, or sharp cheddar cheese. I normally say to shred the cheese from a block, but with this easy dip recipe the pre shredded bagged cheese works just fine. I love using the triple cheddar variety from the Kraft brand. 
  • Canned Corn – Make sure that this is drained really well. 
  • Rotel – Again, make sure it’s drained really well. 
  • Ranch Seasoning Mix – Do not prepare this before using. Simply dump the dry seasoning mix into the mixing bowl.

How To Make Creamy Fiesta Ranch Dip

  • Dip Ingredients : Add all the ingredients into a medium sized mixing bowl. Stir together well.
  • Fridge : Cover the bowl with a lid or plastic wrap and refrigerate it for at least 2 hours before serving. 
  • Serve : Serve with tortilla chips, potato chips, or some veggie sticks (carrots, celery, bell pepper).

Fiesta Ranch Dip FAQ’s

  • How To Store Leftover Dip

    • Keep any leftover dip inside an airtight container, in the fridge, for up to one week. 
    • Give it a good stir before eating the leftovers. 
  • Can I Make It Ahead of Time?

    • Yes! Because this dip requires refrigeration time it’s the perfect make ahead recipe. 
    • The dip needs at least 2 hours of fridge time but I have found that I like the flavor and texture better if it’s been in the fridge for about 6-8 hours. So make it the morning of and let it marinate and thicken up in the fridge before serving it. 
  • Can I Make It Spicy?

    • Yes, it’s so easy to customize this fiesta ranch dip to your spice level. The dip as written has a slight kick to it (because of the Rotel) but it’s not like hot spicy at all. Here are some ideas to spice it up if wanted!
      • Pepper Jack Cheese : Use Pepper Jack cheese instead of cheddar cheese. Or use some of each. 
      • Hot Rotel : Use a can of hot & spicy rotel instead of the mild or original can. 
      • Seasonings : Add some red cayenne pepper or chili powder into the dip before mixing. 
      • Jalapeños : Add a can of drained jalapeño peppers or dice up some fresh jalapeños and add them in. 
  • Serving Suggestions

    • Tortilla Chips
    • Potato Chips
    • Veggies Sticks – carrots, celery, bell pepper, tomatoes
    • Crackers or Pita Bread

  • Variation & Substitution Ideas

    • There are several ways to change up this recipe if wanted. Here are a few ideas and things that I have tried. 
      • Rotel : Even the mild rotel can have a slight kick to it. If you want a very mild fiesta ranch dip then be sure and use a can of petite diced tomatoes (drained well) instead. If you can’t find a can of Rotel then use a can of petite diced tomatoes + a can of diced green chilies. 
      • Cheese : Use any variety of cheese that you prefer. 
      • Sour Cream : Although I recommend using full-fat sour cream, you can use reduced-fat sour cream if wanted. You can even try using half plain Greek yogurt + half sour cream. I’ve never done that, as it will affect the taste slightly, but it is a normal substitute for lots of recipes. 
      • Corn : Use yellow corn, white corn, a can of yellow & white corn, or try using Southwestern Corn instead. Any canned corn variety can be used.

Here are a few of my helpful tips so that you can have success recreating this recipe in your own kitchen ♥

  • Use Full-Fat Sour Cream : For the best taste and thick texture make sure you use the full-fat, regular sour cream. I prefer the Daisy brand over any other brand. 
  • Shred Your Own Cheese : I know it takes extra time but shredding your own cheese always tastes better because it does not have that powder coating on it, like the bagged shredded cheeses do. 
  • Drain Corn & Rotel Well : Make sure that the corn and Rotel diced tomatoes are drained really well before adding them into the bowl.
