I know a bean salad probably is not the most impressive dish or sought after dish. But, who doesn’t need the perfect potluck type salad to take to family gatherings, potlucks, picnics, or even as a side to dinner. This bean salad is really easy, super delicious, and it makes a large amount so it’s perfect for a crowd.

It’s also a sort of healthy salad too. When comparing it to the usual summer picnic dishes; potato salad and macaroni salad. It’s loaded with fresh cucumbers, sweet onion, and a red pepper. Add in 3 different kinds of beans and some frozen corn.

Drizzle it all in some honey mustard dressing and that’s it. I love the addition of the honey mustard salad dressing. Not only is it so easy but it really gives this salad such a creamy, slightly tangy, and sweet flavor.

As it sits in the fridge it does get some liquid pooled in the bottom from all the veggies and salad dressing. Be sure to give it a nice stir before serving and it will be just fine.

I love eating the leftovers of this for lunch the next day. It keeps well in the fridge for a few days.

Ingredients

  • 1 can kidney beans, drained & rinsed
  • 1 can black beans, drained & rinsed
  • 1 can garbanzo beans, drained & rinsed
  • 1 bag (16 oz) frozen corn, thawed but still cold
  • 1 red bell pepper, chopped
  • 1 cucumber, peeled and chopped
  • 1 sweet onion, finely chopped
  • 3/4 cup - 1 cup honey mustard salad dressing

Instructions

  • Combine all the beans, corn, red pepper, cucumber, and onion in a large mixing bowl. Stir to combine.
  • Pour honey mustard dressing over it and stir to combine together.
  • Let sit in the fridge for 3-5 hours so it can get cold and the flavors can develop.

Notes

Be sure and use a honey mustard salad dressing that you love. As that will be the flavor/seasoning for the salad.

Use light salad dressing or regular. I have used both and they both work well.

If you want a very moist & creamy salad then use 1 cup of salad dressing. For a still moist salad but not super moist, then use 3/4 cups. I use 3/4 cup whenever I make this.

      May 6, 2017 at 8:49 am So sorry. My mistake. That is the one bag of frozen corn, thawed. I am fixing that now. You want it to still be cold but thawed. I leave mine out on the counter for about an hour before I make this. I hope that helps :) Have a great weekend!

I am not even sure what you could add in it's place that would still provide enough flavor and texture for the salad.
