Slow Cooker Sweet Glazed Carrots

These tender & sweet baby carrots will quickly become a family favorite. Throw a few ingredients in the crock pot and come back to an amazing side dish that the whole family will love.

SLOW COOKER GLAZED CARROTS- only a few ingredients and a few hours in the crock pot is all it takes for an amazing side dish!

I am not really that great with side dishes. I will usually just do a bagged salad, cut up some cucumbers and tomato and toss it all together and call it good. By the time I am done going through the circus act of trying to cook dinner; juggling the two hot pots on the stove, stopping the kids from fighting, feeding the screaming baby, and picking up spills, I am way too tired to even think about serving a side with the meal.

That’s why I LOVE these carrots. You put them in the crock pot a few hours ahead of time and let them cook. They get so tender & soft, and they almost taste like candy 🙂 My kids love carrots and this is one of the sure ways to get them to eat their veggies.

The 1/2 cup of brown sugar might turn some of you off. I mean you could make cookies for that same amount of sugar 🙂 But, once the carrots are done cooking there is a lot of liquid at the bottom of the slow cooker, so it’s not like each carrot has tablespoons of brown sugar caked onto it. So unless you straight up drink all that cooking liquid that you’ll see when they’re done, you’re not actually eating the brown sugar 🙂

Slow Cooker Glazed Carrots

  • 1/2 cup chicken broth or water
  • 1 bag (32 oz) baby carrots
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 3 tablespoons butter, cut into small pieces

  1. Pour chicken broth or water into bottom of slow cooker. Dump carrots in.
  2. Sprinkle the salt and brown sugar over the carrots. Place the pieces of butter evenly over the top.
  3. Cover and cook on low for 4-5 hours.
  4. The slow cooker tends to mute the seasonings (salt) so check it and add more to taste if you prefer.

If you prefer a recipe that cooks on the stove top, use THIS ONE. I have made that recipe so many times and they are yummy too. I hope you have a wonderful & safe 4th of July weekend. Come back on Monday!

Is this recipe for a large crockpot? I plan on using a 2 qt crockpot that I use for side dishes and wonder if I should cut the recipe in half?

Hi Wendy. I’m not sure on the sized of different crock pots, but I do know that as long as the 2 lb bag of baby carrots fits inside, then you will be fine. I have a larger one (4.5 or 5 qt) that I’ve made this recipe in and I have a really small one (probably 2 qt) that I’ve made these in also. I think it will be fine in a smaller crock pot. Just watch the cooking time. It may need more time (or less) depending on how hot your crock pot cooks. Hope this helps. Let me know if you have any more questions 🙂

I am so happy these were a hit for you! I make them at least once a week. They’re one of the only ways I can get my kids to eat some veggies 🙂 Thanks for coming back to let me know.
